Crunchy Tuna Casserole
This tuna casserole is one of my family’s favorite dishes. It is quick to throw together and inexpensive to make, so it also makes a great dish if you are expecting a crowd.  Most of the ingredients are ready to be mixed together and easily transferred into a casserole dish for a quick cook time.   • 2 cans Cream of Chicken Soup (21oz total)
  • ½ cup of mayonnaise
  • ¼ cup of milk
  • ½ cup diced onion
  • ½ cup diced celery
  • 12oz can of tuna
  • 12oz cooked egg noodles
  • 2 cups shredded cheddar cheese (divided)
  • Salt & pepper (to taste)
  • 1 ½ cups of crushed plain potato chips (optional)
Instructions
  1. Preheat the oven to 375 degrees F. In a large bowl, mix both cans of Cream of Chicken soup, mayonnaise, and milk. Add diced onion and celery and stir, then fold in the can of drained tuna fish, cooked egg noodles, and ¼ cup of shredded cheddar cheese. Add salt and pepper to taste.
  2. Pour contents into a 9x13 inch baking dish and place in the oven and cook for 30 minutes. Remove casserole and add remaining shredded cheddar cheese and the crushed potato chips as the final layer. Put back into the over for the remaining 10 minutes (or until cheese has melted).

Christmas time means cookies and they don’t get much better than this Oatmeal White Chocolate Chunk Cookies with Craisins Recipe. If you’re into creating cookies for the Charismas season add this cookie recipe to your collection; they are really good. I thought I would just eat one to see how they tasted but unfortunately I didn’t stop there-after 3 I figured I had better get them into the freezer or there would be none left for Christmas. This is a simple recipe that doesn’t require a lot of ingredients and the white chocolate and Craisins blend very well together. The cookie dough is very thick and hard to work with a spoon, so I used my hands and formed them like I was making meatballs, and this method worked out very well. Ingredients
  • ⅔ cup unsalted butter (softened)
  • ⅔ cup brown sugar
  • 2 large eggs
  • 1½ cups old fashioned rolled oats
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 package Craisins (5 ounces)
  • ⅔ cup white chocolate chips
Instructions
  1. Preheat oven to 375F.
  2. In a medium bowl using an electric mixer blend the butter and brown sugar together until mixture is creamed together and fluffy and then mix in the eggs until well combined.

  4. In a large bowl whisk together all the dry ingredients except for the Craisins, and chocolate chips, and then stir in the egg and sugar mixture until moistened. Dough will be stiff.

  7. Fold in the Craisins and white chocolate chips. Form the dough into balls like you are making meatballs and place them on a cookie sheet lightly sprayed with cooking spray about 2 inches apart. Bake for 10-12 minutes or until cookies are nicely browned; remove from the cookie sheet and cool on a wire rack.

I was looking for a one dish recipe that was a little different so I gave my son a call at Blohchef.net to see if he had a recipe he would recommend trying. After his recommendation I decided on this Sour Cream Noodle Bake Recipe. This is a simple recipe that you can have on the dinner table in less than an hour; making it a great recipe for after work or school.

  • 1¼ pounds ground chuck
  • 1 can tomato sauce (15 ounce)
  • salt and pepper

  • 8 ounces egg noodles
  • ½ cup sour cream
  • 1¼ cup small curd cottage cheese
  • ½ cup sliced green onions
  • 1 cup shredded sharp cheddar cheese
Instructions
  1. Preheat oven 350F.
  2. Cook the egg noodles according to package directions to al dente.
  3. While the noodles are cooking in a large skillet brown the ground beef until no longer pink inside. Drain if necessary. Mix the tomato sauce into the skillet with the ground beef, and salt and pepper to taste. Reduce the heat to a simmer and continue cooking while putting together the cottage cheese mixture.

  6. In a large bowl mix together the egg noodles, sour cream, cottage cheese and green onions.

  10. Using a 9 x 13 casserole dish lightly sprayed with cooking spray spread 1/ 2 the noodle mixture on the bottom, and then layer ½ of the meat mixture over the top; and then sprinkle with ½ the cheese. Repeat the process finishing off with the cheese on the top.

  12. Serve hot with fresh biscuits or garlic toast.

This Roast Rabbit in Wine Sauce Recipe is another great recipe for wild or domestic rabbit meat. I prepared this recipe with domestic rabbit meat, but if you use wild rabbit, you will probably have to cook the rabbit meat a little longer. This recipe calls for port wine but I used a homemade blueberry wine I had on hand. The end result was a delicious and tender rabbit dish.

  • 1 rabbit (cut into pieces)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon dried rosemary (crushed)
  • 1 small onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1/ 2 cup port wine
  • 1/ 2 cup chicken broth
  • Finely chopped parsley for garnish (optional)

Instructions
  1. Preheat oven to 450F.
  2. Wash rabbit meat in cold water and pat dry with paper toweling. Sprinkle with salt and pepper to taste.
  3. Place the oil and butter in a 13 x 9 baking dish and place in the oven until the butter is melted.
  4. Arrange the rabbit pieces singly over the bottom of the dish, sprinkle with rosemary, and roast the rabbit for 30 minutes. Turn the rabbit, distribute the onion and garlic over the top and then add the wine and the chicken broth. Continue cooking turning the rabbit pieces a couple of times while roasting. Cook until rabbit is tender. (Cooking time may be a little longer with wild rabbit meat.) Serve the wine sauce over the rabbit.

Chicken and Dumplings Recipe

I don’t know why but I have a tendency to shy away from Chicken and Dumplings Recipes. Maybe it’s because of the way the dough is cooked to form the dumplings. I guess I get the feeling it should be nice and brown like a biscuit; but it is not. When I saw this Chicken and Dumplings Recipe I decided to give it a try anyway because I do like chicken and dumplings.

This Chicken and Dumplings Recipe did not disappoint me it was a perfect combination of flavors. This recipe uses boneless skinless chicken thighs so the chicken was nice and moist, the broth and vegetables were delicious and the dumplings complemented the dish very well.

This is a simple recipe that doesn’t require a lot of prep or cooking time, but if you are feeding more than 2, I recommend you double the recipe.

  • 2 tablespoons butter
  • 1 cup baby carrots (peeled and sliced)
  • 1 small onion (finely chopped)
  • 3 cloves of garlic (minced)
  • ⅛ teaspoon thyme
  • 1 tablespoon flour
  • ¼ cup sherry
  • 2 cups chicken broth
  • 1 pound boneless skinless chicken thighs
  • ½ cup frozen peas

  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup chicken broth
  • 1 tablespoon butter (melted)
Instructions
  1. Cut chicken thighs into 1 inch pieces and prepare the carrot, garlic and onion.

Melt the butter in a large skillet and cook the carrots and onion until onion starts to brown and then mix in the thyme, garlic, ½ teaspoon salt and ½ teaspoon pepper, stir in the flour and cook for about 1 minute; continue stirring while cooking. Add the sherry, bring to a boil, and continue cooking until sherry cooks down-mixture will start to thicken. Stir in the chicken broth while scraping up any dripping from the bottom of the pan. Reduce the heat to simmer, cover, and cook until chicken is done.

  6. While chicken is cooking mix together the dumpling dough by combining the dry ingredients in a bowl. Mix in the melted butter and chicken broth and mix until just moistened.

When the chicken is done-salt and pepper to taste, and then drop a heaping tablespoons of the dumpling mixture spaced about 1 inch apart into the stew (should have 6-8 dumplings depending on size). Increase the heat to medium, cover and cook for 5 minutes and then sprinkle in the peas around the dumplings in the pan. Continue cooking until the peas and dumplings are done.
  9. Let mixture cool a little bit before serving.

 Warning-Warm apple pie with ice cream is so good it has to be evil.

My apple trees set fruit so heavy this year there branches were almost breaking so I couldn’t let the season go by without making at least one apple pie. My original thought was to make an additional apple pie for Thanksgiving; along with a pumpkin-but because I was not able to keep my hands off of the first one I decided I would table the idea and just make 1 pumpkin pie instead. I guess my thinking is if it’s not there I won’t be tempted to eat it.

Making homemade apple pie is really simple. Most of the work is in the preparation for the pie crust. Other than that it is mostly peeling and slicing the apples, applying the seasoning, and baking the pie. You can use your favorite pie crust recipe, or use the store bought refrigerated crusts for a 9 inch pie. For the filling in this pie I used Instant Tapioca, but that is optional, you can also use flour instead.

Tip: One of the things I like to do when making a pie that has a top crust, is cover the edges with aluminum foil to keep them from browning to quickly; you would be surprised at the difference this makes.

  • 1 set of 9 inch pie crusts (your favorite recipe or store bought)
  • 2 tablespoons Instant Tapioca (or 2 tablespoons of flour)
  • ¾ cup sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 6 cups apples (peeled and thinly sliced)
  • 1 tablespoon lemon juice
  • 1 tablespoon butter
Instructions
  1. Preheat oven to 400F.
  2. Prepare the apples and place them into a large bowl. Gently mix in all the ingredients except for the butter and pie crust. Let the mixture rest for about 15 minutes while you are preparing the crust.

  4. Lightly spray a 9 inch pie plate with cooking spray and spread the bottom crust over the bottom and up the sides of the dish. Distribute the apple mixture evenly over the crust. Shave butter in thin slices on top of the apples and then lay the second crust on top, and seal the edges. Cut several slit in the crust for venting.

For some reason up until know it has been very hard to purchase Haddock in this area, so it was I pleasant surprise to see it show up here in the market. This Baked Haddock Recipe probably could be used with any good quality white fish-this is another one of those recipes that is simple to put together and is really good. There is very little prep time involved and the fish cooks very quickly. You could probably spice this dish up a little more if you wanted to but I thought the recipe was real good as written.   • ¾ cup milk
  • 2 teaspoons salt
  • ¾ cup bread crumbs
  • ¼ cup grated Parmesan cheese
  • ¼ teaspoon ground dried thyme
  • 4 haddock fillets (about 1 pound)

  • Preheat oven to 500F.
Instructions
  1. In a shallow dish whisk together the breadcrumbs, grated Parmesan cheese and thyme. (Pie dish works great for this)

With the holiday season coming up I thought it would be a great time to start baking some cookies with the intention of freezing some of them for the Christmas season.   • ¾ teaspoon baking powder
  • ½ teaspoon baking soda

  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 ounces melt chocolate-melted and cooled
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped walnuts
Instructions
  1. Preheat oven to 350F.
  2. Place one cup of oats in a blender and process until well ground. In a large bowl mix together the ground oats, flour, baking powder, baking soda and salt.

Using a large spoon mix in the melted chocolate until well combined. I don’t usually use the word epic in a recipe but that’s exactly what my wife called this Breakfast Sandwich. It is a little sloppy to eat because of the sauce-but it’s delicious. This is another simple and good recipe that doesn’t require a lot of prep or cooking time. We were in the mood for something a little different for supper, so I put this Epic Breakfast Sandwich Recipe on the menu.

  • 4 English muffins (split)
  • 6 slices bacon (cut in half)
  • 3 tablespoons unsalted butter (softened for spreading)
  • ¼ cup mayonnaise
  • 1 teaspoon hot sauce-or to taste
  • 4 large eggs
  • 4 ounces shredded cheddar cheese (mild)
  • 1½ cups baby spinach
  • 8 thin tomato slices (about 1 medium)

  2. Adjust oven rack to about 5 inches from the broiler element. Preheat the broiler for high heat. Butter the split side of the English muffins; place them on a cookie sheet split side up. Broil muffins until golden brown. Flip the muffins and cook on the other side until they start to brown. Set aside.

  5. In a small bowl mix together the mayo and hot sauce - set aside.
  6. Using 2 small bowls crack 2 eggs into each bowl - set aside.

  8. Cook the bacon in a nonstick large skillet until crispy (I used a cast iron skillet which worked fine). Set aside on paper towels.

  10. Remove all the bacon fat except for one tablespoon from the skillet. Heat until the skillet starts to shimmer from the heat and poor in the eggs, one bowl on each side. Salt and pepper to taste, cover and cook for about 1 minute. Quickly place 3 slices of bacon over each egg, and then top each egg with ¼ cup shredded cheese. Cook covered until egg white is cooked and cheese is melted.
  11. To put it all together place each egg on an English muffin half, top each with 1/ 4 the sauce, spinach and then 2 slices of tomato; add the muffin tops and enjoy.

Grilled Salmon on Hickory Chips Recipe

 

I have wanted to prepare cedar plank salmon on the grill for quite some time but the plank always stood in my way. I knew it wouldn’t be all that hard to get it; it was just a matter of remembering to get it, which never seemed to happen. When I saw this recipe that used wood chips in place of the cedar plank it struck me as being a great idea. I had hickory chips on hand, and salmon in the freezer, so I decided to give it a try. The end result was delicious grilled salmon with a slight hint of Hickory smoke wood flavor. This recipe caught me by surprise because it tasted a lot better than I expected; this one will go on my favorites list.

Cedar Plank Salmon Knock Off Recipe

Ingredients
  • 4 skin on salmon fillets (about 1 pound total)
  • 1½ teaspoons sugar
  • ½ teaspoon salt
  • 1/ 4 teaspoon pepper
  • 1 tablespoon olive oil
  • 2 cups hickory wood chips (soaked in water for 15 minutes)
Instructions
  1. Heat the grill to high heat (clean and oil the grates)
  2. While grill is heating-Using heavy duty aluminum foil make 4 packets large enough to hold each fillet with a little extra room. (about 7 x 5 inches) cut a series of ½ inch slits with a knife in the bottom of the foil.
  3. Rinse salmon fillets and pat them dry with paper towels. Mix together the sugar, salt and pepper.
  4. Divide the woodchips between the 4 foil packets. Rup the salmon with the sugar mixture and brush lightly with olive oil and place the fillets on the wood chips.
  5. Grill covered on high heat until salmon is done. (I like my fish well done which is about 145F. for me this took about 15 minutes. You can also use a fork-when the fish flakes easily it’s done)
  6. Transfer fish to a serving platter, cover with aluminum foil and let rest 5 minutes. You can separate the skin using a spatula run between the skin and the meat. (I just flipped it over and scraped it with a fork and it came off easily.
  7. Serve hot and enjoy.
