These Ricotta Meatballs are moist and delicious. This recipe doesn’t require many ingredients and is very simple to put together. The Ricotta cheese make the meatballs nice and moist so you can get away with using very lean ground beef; I used ground round for this recipe.

Ingredients
  • ½ medium onion (finely chopped)
  • 4 tablespoons olive oil (divided)
  • 3 cloves garlic (crushed and minced)
  • 1 pound of lean ground beef
  • 1 cup whole milk Ricotta cheese
  • ¼ cup chopped Italian parsley
  • 1 egg (beaten)
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • Pinch cayenne pepper or to taste
  • ⅓ cup dry breadcrumbs
  • 1 jar marinara sauce (24 ounces)
  • 1 cup water
Instructions
  1. In a large nonstick skillet using 2 tablespoons of the oil cook onion until translucent. Add the garlic and continue cooking until fragrant; place onion mixture in a large bowl. Mix in the ground beef, Ricotta cheese, parsley, egg, salt, pepper, and cayenne pepper until just combined. Add the bread crumbs and mix until thoroughly combined. (Hands work great for this.)
  2. Measure out about 2 tablespoons of the meat mixture for each meatball; form and set aside.
  3. In the same skillet using the remaining olive oil brown meatballs over medium heat on all sides; and then drain any excess fat if needed. Add the sauce and water to the meatballs, bring mixture to a boil, and then reduce the heat to a high simmer. Cook until meatballs are no longer pink inside – stirring occasionally while cooking. (about 30 minutes)
  4. Serve over spaghetti.

This Instant Pot Mini Hunter Chicken recipe looked really good so I thought I would give it a try. It is cooked in an Instant Pot so I knew it wouldn’t take all that long to put together.

Because of the type of sauce in this recipe I thought it would be real good served over pasta, but the original recipe served this dish over polenta. Well I have never made polenta before so I thought I would give it a try. I have include a link to the recipe for the polenta I used because it is some of the best I ever eaten; give it a try.

The only thing I would do different with this recipe is to allow a little more time to cook the sauce down, to thicken it a little bit, after the chicken is removed from the Instant Pot.

  • 1 tablespoon vegetable oil
  • ½ medium onion sliced
  • 8 ounces fresh mushrooms (sliced)
  • 2 cloves garlic (crushed and minced)
  • ¼ cup red wine
  • 3 pounds bone-in chicken thighs or quarters
  • 1 can diced tomatoes with juice (28 ounces)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ cup water
Instructions
  1. Select the sauté function on the instant Pot. When the inner pot is hot add the oil, onion, mushrooms, and garlic and cook until mushrooms have given up some of their moisture; about 5 minutes. Add the wine and stir off any dripping stuck to the bottom of the inner pot.
  2. In a bowl mix together the tomatoes, water, and seasonings until well combined.
  3. Place the chicken over the mushroom mixture and pour the tomatoes over the top.
  4. Secure the lid and set Instant Pot to pressure cook for 20 minutes.
  5. When pressure cooking is done carefully turn the valve to vent to release the pressure and then carefully remove the lid.
  6. Remove the chicken to a serving platter. Serve the sauce and chicken over polenta – or pasta your choice.

 

Rich and Creamy Polenta Recipe

I have only eaten polenta a couple of times and I will have to say I was not very impressed. I was planning on preparing an Instant Pot recipe and it recommended serving the dish with polenta, so I decided to give it a try. My wife and I both were pretty impressed with this Polenta; it was outstanding. It does take a little time, but it is well worth the effort; we will be sure to make it again.

Ingredients
  • 4 cups water
  • 1 teaspoon salt
  • 1 cup cornmeal
  • 3 tablespoons butter (divided)
  • ½ cup shredded parmesan cheese
Instructions
  1. Place the water and salt into a medium size sauce pan and bring to a boil. Gradually add the cornmeal while constantly stirring with a whisk to avoid creating any lumps.
  2. Reduce heat to low and continue stirring until polenta starts to thicken. Cover and continue cooking for 30 minutes, stirring every 5 to 6 minutes with a wooden spoon.
  3. Polenta is done when it is creamy and all individual grains are tender. (should not be gritty at all)
  4. Remove from heat and stir in 2 tablespoons of butter – when butter is half melted mix in the cheese stirring until butter and cheese are completely melted; cover and let rest of 5 minutes.
  5. Top polenta with remaining butter and garnish with more cheese if desired,

  • 1 medium green bell pepper (cut into strips)
  • 1 medium red bell pepper (cut into strips)
  • 1 small sweet onion (sliced)
  • ¼ cup Zesty Italian dressing
  • 1 package of hot dogs
  • Hot dog buns
Instructions
  1. Prepare and preheat grill to medium heat
  2. Place peppers and onion on a large sheet of heavy duty aluminum foil and drizzle the dressing over the top. Fold the foil over the vegetables to form a packet.
  3. Grill vegetables for 15 minutes or until crisp-tender.
  4. After 6 minutes start grilling the hot dogs, grilling them until heated through. (Turn packet and hot dogs occasionally while grilling) this is also a good time to toast the buns if you wish to do so.
  5. Remove the foil packet from the grill and cut a few slits in the top to release the steam, and then open carefully. Serve the hot dogs topped with the vegetable mixture

  • 1 ½ pounds chicken tenders (cut into 1 ½ inch pieces)
  • 1 cup buttermilk
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt to taste
  • 2 cups Ritz cracker crumbs (I used a food processor to crush the crackers – if you don’t have one place them in a food grade plastic bag and crush them with a rolling pin. They don’t have to be real fine)
  • ⅓ cup Panko bread crumbs
  • ¼ cup grated Parmesan cheese.
  • Oil for deep frying.
Instructions
  1. In a large bowl mix together the butter milk, garlic, paprika, and salt; toss the chicken in the butter milk mixture, cover with plastic, and refrigerate for about 2 hours.
  2. In a shallow dish like a pie plate whisk together the Ritz cracker crumbs, parmesan cheese and panko bread crumbs.
  3. Preheat deep fryer to 350F.
  4. Roll the chicken pieces one piece at a time in the crumb mixture and deep fry in batches until golden brown and crispy. Place on paper towels to drain any excess oil.
  5. Serve as a stand-alone snack or with your favorite dipping sauce.
  6. Enjoy

  • 1 package fresh mushrooms (8 ounces – sliced)

Instructions

  2. In a medium size bowl mix together the tomato paste, Merlot, tapioca, sugar, basil, salt, and pepper. Pour mixture over the chicken, cover, and cook on low for 5-6 hours or until chicken is tender.
  3. Serve over pasta sprinkled with Parmesan cheese.
  4. Note: ¼ cup chicken broth can be used in place of the Merlot.

This string pie is basically baked spaghetti with a little different twist consisting of eggs and cottage cheese.   • 2 large eggs (beaten)

  1. Preheat oven to 350F.
  2. Cook spaghetti.
  3. While spaghetti is cooking in a large skillet over medium high heat cook the burger, pepper, and onion until burger is no longer pink inside; drain excess fat if needed. Mix in the spaghetti sauce.
  4. In a large bowl mix together the spaghetti, eggs, Parmesan cheese, and butter.
  5. Place the spaghetti mixture into the bottom of a 13 x 9 casserole dish lightly sprayed with cooking spray. Spread the cottage cheese over the top and then top with the meat mixture. Sprinkle with the Mozzarella cheese and bake until thoroughly heated and cheese is melted; about 20 minutes.

  1. In a large nonstick skillet over medium high heat using the oil cook onion and ¼ teaspoon salt until onion is softened and starts to brown. Add the red pepper flakes and garlic and continue cooking until fragrant (about 30 seconds). Add the burger and continue cooking until burger is no longer pink inside. Breaking up the burger as it cooks.
  2. Spread the lasagna noodles over the top of the burger and pour the crushed tomatoes over the top. Bring mixture to a boil, cover, and reduce heat to a high simmer. Cook for 20 minutes or until noodles are tender (stirring frequently).
  3. Remove from heat and mix in 2 tablespoons of mozzarella cheese and 1 tablespoon of Parmesan, and then salt and pepper to taste. Arrange heaping tablespoons of ricotta cheese on top and then top with the remaining mozzarella, and Parmesan cheese. Cover and let set until cheese is melted.
  4. Serve hot.

  • 4 chicken leg quarters
  • 2 tablespoons olive oil
  • Kosher salt
  • Pepper
  • 1 small onion (finely chopped)

  2. Place onion in the now empty skillet, add a pinch of salt, and cook until onion starts to brown. Add the garlic and thyme and cook until fragrant, and then mix in the eggplant, and squash.
  3. Add the tomatoes and broth to the mixture and work the chicken into the sauce. Cook, stirring occasionally, on simmer until chicken is done. (185F)
  4. Serve hot garnished with Parmesan cheese.

  • 1 can crushed tomatoes
  • 1 tablespoon olive oil
  • 1 small onion (finely chopped)
  • 2 garlic cloves minced
  • 8 ounces of mushrooms (cleaned and quartered)
  • 8 ounces bulk Italian sausage
  • 1½ cups water
  • 1 package cheese ravioli (fresh or frozen-frozen will take a little longer to cook)
  • ½ tablespoon dried basil

Instructions
  1. using the oil in a large skillet over medium high heat cook the onion and mushrooms until onions start to brown; stir in the garlic and cook until fragrant.
  2. Add the sausage to the meat mixture and cook while breaking up the sausage. Cook until sausage is no longer pink inside. Stir in ⅛ teaspoon pepper and the dried basil, continue cooking until mixture is slightly thicken.
  3. Add the water and ravioli to the mixture and cook at a high simmer until ravioli is done. (if cooking from frozen you might have to add some extra water if the sauce gets to thick)
  4. Serve topped with the Parmesan cheese.
