Cider Baked Holiday Ham Recipe

  • 1 large oven bad
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon whole cloves
  • 3 1/4 quarts apple cider
  • 8 cups of ice cubes
  • 1 bone-in half ham (710 pounds)
  • 2 tablespoons Dijon mustard
  • 1 cup brown sugar (packed)
  • 1 teaspoon pepper

Instructions

  1. In a large saucepan mix together 4 cups apple cider, cloves, and cinnamon, and bring the mixture to a boil over medium-high heat. Pour the mixture into a container large enough to hold the ham.
  2. Add 4 more cups of apple cider, and then the ice, stirring occasionally until ice is melted.
  3. Remove any skin from the ham and trim the fat down to about a 1/ 4 inch. Score the ham down about a 1/ 2 inch in a diamond pattern 1 – 2 inches apart.
  4. Place the ham in the cider mixture; ham should be mostly covered, add some cold water if needed. Marinate in the refrigerator overnight.
  5. minutes before you plan on roasting the ham remove the ham from the marinade and discard mixture. Place the ham in the oven bag along with 1 cup of apple cider, seal the bag, and cut several small slits on top for venting.
  6. Place the bag in a roasting pan and let rest for 90 minutes at room temperature.
  7. Preheat oven to 300F with oven rack set at the lowest position. Roast the ham for 1 1/ 2 to 2 hours to an internal temperature of 100F.
  8. While the ham is cooking in a medium-size saucepan mix together the mustard and 4 cups of cider. Bring the mixture to a boil, reduce the heat to medium, and cook until the cider is reduced to about 1/ 3 cup. Set aside (Mixture should by syrupy – this will take about an hour). In a medium size, bowl mixes together the brown sugar and pepper and set aside.
  9. Remove the ham from the oven and increase the oven temperature to 400F. Let the ham rest for 5 minutes; roll the bag back to uncover the ham and using a pastry brush, brush the apple cider syrup mixture over the ham.
  10. Using your hands pack the brown sugar mixture around the exterior of the ham. Return the ham uncovered into the oven and bake until brown sugar is dark and caramelized. (15 – 20 minutes)
  11. Remove the ham to a serving platter and let rest lightly covered with aluminum foil for about 15 minutes.
