2 pound sweet potatoes (cut into 1/4-inch cubes or quartered and thinly sliced)
4 tablespoons unsalted butter
3 tablespoons heavy cream
1 teaspoon sugar
Cut up sweet potatoes and set aside.
In a large saucepan melt the butter and then mix in the sugar, 1/ 4 teaspoon pepper, 1/ 2 teaspoon salt and 2 tablespoons of cream. Cook covered over low heat, stirring occasionally until sweet potatoes are tender. (This should take 40-45 minutes)
To mash, the potatoes stir in the other tablespoon of cream and mash using a potato masher or electric mixer.
