Southern Batter Fried Chicken Recipe

  • 1 frying chicken cut into pieces
  • 1/4 cup celery (chopped)
  • 1 small onion (sliced)
  • 1/2 teaspoon salt
  • 1 bay leaf
  • 1 cup of water
  • Oil for frying
  • To make batter
  • 1 1/2 cups all-purpose flour (sifted)
  • 2 teaspoons baking powder
  • 2 teaspoons salt
  • 2 large eggs
  • 1 cup milk
  • 1/4 teaspoon pepper
  • 1 1/2 tablespoons cooking oil

Instructions

  1. Place the water in a large skillet and add the celery, onion, bay leaf, salt, and the chicken pieces.
  2. Bring the mixture to a boil, reduce heat to simmer, cover and cook for 20 minutes or until desired doneness. Remove the chicken from the skillet to a platter to cool.
  3. Preheat deep fryer to 350F.
  4. While the chicken is cooling sift the flour with the baking powder into a medium size bowl, add the salt and pepper and set aside.
  5. In another medium size bowl using an electric mixer thoroughly combine the eggs, milk, and oil. Gradually mix the flour into the egg mixture until smooth.
  6. When the chicken pieces are cool enough to handle dip them into the batter – coating evenly; deep fry for 12-15 minutes until golden brown and tender.
