Eggs and Sausage Casserole Recipe

It has been awhile since I prepared a breakfast dinner for supper. I had some homemade breakfast sausage in the freezer and decided to use it up. For some reason I have never prepared an egg and sausage type casserole-if have had Egg and Sausage Casserole at get togethers, and thought it was pretty good. When I came across this recipe I thought I would give it a try. Outside of the seasoning that is incorporated into the breakfast sausage there is no additional seasoning added, which leaves a lot of room to adjust the seasoning to your taste. Some good additions could be mushrooms or sweet peppers and maybe some cayenne or red pepper flakes if you want to turn up the heat a little bit. I prepared this recipe as written and it was very good. Enjoy

Serves 6


1 pound sage flavored breakfast sausage

3 cups shredded potatoes (drained and press)

1/4 cup butter (melted)

12 ounces mild shredded Cheddar cheese

1/2 cup onion (finely diced)

1 (16 ounce) container small curd cottage cheese

6 large eggs



1. Preheat oven to 375 degrees F (190 degrees C) and lightly grease a 9×13 inch casserole dish.

2.  Brown sausage in a skillet over medium heat.

3. In a bowl mix together the melted butter and shredded potatoes, then line them in the bottom and on the sides of the casserole dish.

4. In a bowl mix the sausage, Cheddar cheese, onion, cottage cheese, and eggs. Pour over the potato mixture.

5.  Bake 1 hour or until a toothpick inserted into center of the casserole comes out clean.

Let cool for 5 minutes before serving.

Breakfast Taco Recipe

Great for Breakfast or a great supper. When my son suggested this for supper I wasn’t sure what to think; but I went with the idea, and I was glad I did. What a nice treat. The eggs are a nice added touch. Several times a year we will do what we call a supper breakfast, this one will defiantly be added to the list. This Breakfast Taco Recipe is easy to make and the combinations of flavors make for a delicious breakfast or supper. Enjoy!

  • 1 lb ground burger
  • 1 small onion (chopped)
  • 1 package taco seasoning
  • 6 eggs
  • ¼ cup milk
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 (14 ounce) can refried beans
  • 2 cups shredded cheddar cheese
  • 8 flour tortillas
  1. In a large skillet over medium high heat. Add hamburger and onions. Cook
  2. while chopping up the meat with a metal spatula. Cook until browned. Mix in
  3. taco seasoning and cook according to the directions on the taco seasoning
  4. package. Remove from heat. While burger is cooking in a small saucepan heat
  5. refried beans over low heat.
  6. In a medium bowl whisk together eggs, milk, salt and pepper. Spray
  7. another skillet with cooking spray and heat to medium heat. Pour in the
  8. scrambled egg mixture and cook and scramble the eggs until fully cooked.

  10. To assemble tacos- spread a thin layer of refried beans on the bottom of
  11. each tortillas. Top with taco meat, eggs, cheese and salsa.
