Sloppy Joe Casserole

This Sloppy Joe Casserole Recipe is a simple and good recipe and if you have kids to feed, they will love it. It does take a little time to put it all together but you can probably have it on the table in about an hour. This recipe is very basic so you could easily add some extra ingredients like, chopped onion, green pepper, and maybe even some mushrooms. The seasoning depends on the brand of Sloppy Joe mix you are using. I used a generic brand and it worked out very well.   • 8 ounces shell macaroni
  • 1 package Sloppy Joe seasoning mix
  • 1 pound lean ground beef
  • 1 can tomato paste (6 ounces)
  • 1 can tomato sauce (8 ounces)
  • 1 carton cottage cheese (16 ounces)
  • ½ cup shredded Cheddar cheese
  • 1¼ cup water
  1. Preheat oven to 350F.
  2. Cook shells according to package directions. Drain and rinse.

  4. In a large skillet over medium high heat cook burger until no longer pink inside. Drain if needed. Add 1¼ cup water to the burger and then mix in the tomato paste, tomato sauce, and Sloppy Joe Seasoning. Reduce heat to simmer and continue cooking for about 10 minutes.

  6. Spray a 2½ quart casserole dish with cooking spray and spread 1/ 2 of the shells over the bottom followed by the cottage cheese, and then the meat mixture. Repeat the layers and top with the cheddar cheese.
