When I saw this Smoked Polish Sausage and Potato Bake Recipe it reminded me a lot of the potato packets with sausage I prepare on the grill; except it’s cooked in the oven. I haven’t had smoked sausage for a long time, this sounded good, and so I decided to give it a try. I choose smoked polish sausage for this recipe, but I think almost any smoked sausage would blend well with the other ingredients. I thought this was a really good one dish meal, the only thing I regretted is; I wish I had added fresh mushrooms to the recipe. The cooking time listed in the directions is about right required for a tender crisp texture for the vegetables, if you would like them tender, extend the cooking time for about another 15 minutes.

Ingredients
14 ounces-1 pound smoked Polish Sausage (cut into 1 inch slices)
6 cups red new potatoes (cut into 1 inch chunks)
1 green bell pepper (cut into 1 inch pieces)
1 red bell pepper (cut into 1 inch pieces)
1 large onion (sliced lengthwise)
2 garlic cloves (minced)
1/4 cup chicken broth
1 tablespoon olive oil
1 teaspoon dried rosemary leaves
1 teaspoon dried thyme
1/4 teaspoon ground black pepper
Directions
Preheat oven to 400F.
1. Place the cubed potatoes in a sauce pan. Bring to a boil, and then simmer for 10 minutes, or until tender crisp.
2. In a 13 x 8 casserole dish combine all the ingredients, then lightly toss to coat.
3. Bake for 30 minutes until potatoes are browned and vegetables are at your desired doneness.
