With the Holidays coming up a good mashed potato recipe is priceless. You have to allow a little extra time for this Roast Garlic Mashed Potato Recipe due to the time it takes to roast the garlic. I roasted the garlic ahead of time because I had to use the oven, but you could just as easily roast the garlic while you are cooking the potatoes. The roasted garlic is a nice touch, along with the combination of cream cheese it is just delicious. Enjoy
2 lbs potatoes
1 head garlic
1 tablespoon olive oil
1/4 cup sour cream
4 tablespoons butter
Milk or cream, if needed-if you need to add for consistence be careful so you don’t add to much
Salt and white pepper to taste
Directions for garlic
1. Divide garlic into cloves and roll them in the olive oil to coat them-wrap in aluminum foil and bake at 350F for 40 minutes.
2. Let the garlic cool and mash with a fork.

1. Peel and boil potatoes till tender
2. Add all ingredients and mash with a mixer or potato masher. If you want the mashed potatoes to be a little creamier add a little milk or cream.
