Taco Tater Tots Casserole Recipe

I have incorporated tater tots into a number of recipes and it seems like they are always pretty good. We had decided on Tacos for supper and then I ran across this Taco Tater Tots Casserole Recipe and decided to give it a try. I followed the recipe as written and the results were really good. This is a mildly seasoned recipe so I would recommend you season it to taste. This is a good size recipe and should feed 6-8 people unless you have some heavy eaters. This is not only a good supper recipe, but would also be great for parties or pot luck suppers. Ingredients

 

1 pound ground beef

1 small onion (diced)

1 clove garlic (minced)

1 small can black olives (sliced)

1 packet taco seasoning mix (1 ounce)

1 (16 ounce) bag frozen corn

1 (4 ounce) can green chilies (diced and drained)

1 (12 ounce) can black beans, rinsed and drained

1 (16 ounce) bag shredded Mexican cheese blend

1 (16 ounce) package frozen tater tots

1 (10.5 fluid ounce) can enchilada sauce

 

Directions

 

Preheat an oven to 375 degrees F (190 degrees C).

Spray a 9×13-inch baking dish with cooking spray.

1. Cook the ground beef, garlic and onion in a skillet over medium heat until completely browned.

2. Add the taco seasoning mix, green chilies, frozen corn, and black beans to the ground beef; cook until heated though.

3. In a large bowl Mix together the ground beef mixture with about 3/4 of the Mexican cheese blend and all the tater tots; stir to combine.

4.  Pour about 1/3 of the enchilada sauce into the bottom of the prepared baking dish. Add the tater tot mixture to the baking dish; lightly pat the mixture down into a solid, even layer. Pour the remaining enchilada sauce over the tater tots.

5. Bake in the preheated oven for 40 minutes. Sprinkle the remaining Mexican cheese over the casserole and return to oven until the cheese is melted and bubbly.

Top with the black olives for garnish and serve hot.
