Low Carb Italian Meat Loaf Recipe

I don’t make it a point to prepare low carb recipes very often, but a couple of items in the ingredients list; in this Low Carb Italian Meat Loaf Recipe caught my eye. The first item was Zucchini; which you don’t see in a meat loaf recipe very often. The second was whole wheat fresh bread crumbs which I thought was kind of unique because most meat loaf recipe I have prepared called for traditional or seasoned dry bread crumbs.

This is a simple recipe, but it does take some time, because of the baking time which is about an hour. I followed the recipe as is and the result was a moist good tasting meat loaf. If you’re into a low carb diet, or just want to try something a little different, give this Low Carb Italian Meat Loaf Recipe a try.

Ingredients

1 can tomato paste (6 ounces)

1/2 cup dry red wine

1/2 cup water

1 teaspoon garlic (minced)

1/2 dried basil

1/2 dried oregano

1/4 teaspoon salt

12 ounces lean ground round

12 ounces ground turkey breast

1 cup fresh whole wheat bread crumbs (2 slices whole wheat bread- Fresh bread crumbs are very easy to make-just use a blender or food processor)

1/2 cup shredded Zucchini

2 egg whites

Directions

1. Preheat oven to 350F.

2. In a small sauce pan combine tomato paste, wine, water, garlic, basil, oregano and salt. Bring to a boil; reduce heat and simmer uncovered for 15 minutes to blend the flavors.

3. In a large bowl combine the ground turkey, ground round, bread crumbs, zucchini, egg whites and 1/2 cup of the tomato mixture.

4. Shape into a loaf and place in a 9x5x3 loaf pan. Bake for 45 minutes. Remove from the oven and drain any excess fat, or liquid, and pour the remaining tomato mixture over the top of the meat loaf.

5. Bake for an additional 15 minutes. Place on a serving platter and let cool for about 10 minutes before slicing.
