Ricotta Pancakes Recipe

I decided to do something a little different. It’s been kind of cool here in upper Michigan so I decided to make up a batch of pancakes. This Ricotta Pancakes Recipe is a simple recipe with very little prep time so you can have pancakes on the breakfast table in less than a half an hour. The next time you’re in the mood for pancakes give this one a try, the Ricotta cheese is a nice added touch. Enjoy

  • 1 1/2 cups all-purpose flour

  • 1 teaspoon salt
  • 2 eggs
  • 1 1/2 cups milk
  • 1/2 cup Ricotta cheese
  • 1/4 cup sugar

  3. In a lightly oiled griddle or cast iron skillet heated to medium high heat ladle the batter according to the size pancakes desired. (For me this was about 1/3 cup-but I make good size pancakes)

  5. Cook the pancakes until bubbles form on top, and the pancake is golden brown on the bottom. Flip the pancake and cook until done. (Adjust the heat as needed-you don’t want the pancakes to get too dark before it is time to turn them.)
  6. Serve with butter and Maple Syrup
