I decided to do something a little different. It’s been kind of cool here in upper Michigan so I decided to make up a batch of pancakes. This Ricotta Pancakes Recipe is a simple recipe with very little prep time so you can have pancakes on the breakfast table in less than a half an hour. The next time you’re in the mood for pancakes give this one a try, the Ricotta cheese is a nice added touch. Enjoy

Ingredients
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 eggs
- 1 1/2 cups milk
- 1/2 cup Ricotta cheese
- 1/4 cup sugar
- 1 tablespoon vanilla
Instructions
- Place all the dry ingredients in a large bowl- then add the milk, egg, and vanilla. Using an electric mixer; mix the batter until smooth, and then mix in the Ricotta cheese.

- In a lightly oiled griddle or cast iron skillet heated to medium high heat ladle the batter according to the size pancakes desired. (For me this was about 1/3 cup-but I make good size pancakes)

- Cook the pancakes until bubbles form on top, and the pancake is golden brown on the bottom. Flip the pancake and cook until done. (Adjust the heat as needed-you don’t want the pancakes to get too dark before it is time to turn them.)
- Serve with butter and Maple Syrup
