Roast Garlic Mashed Potato Recipe

With the Holidays coming up a good mashed potato recipe is priceless. You have to allow a little extra time for this Roast Garlic Mashed Potato Recipe due to the time it takes to roast the garlic. I roasted the garlic ahead of time because I had to use the oven, but you could just as easily roast the garlic while you are cooking the potatoes. The roasted garlic is a nice touch, along with the combination of cream cheese it is just delicious. Enjoy

Roast Garlic Mashed Potato Recipe

Ingredients
  • 2 lbs potatoes
  • 1 head garlic
  • 1 tablespoon olive oil
  • 1/4 cup sour cream
  • 4 tablespoons butter
  • Milk or cream, if needed-if you need to add for consistence be careful so you don’t add to much
  • Salt and white pepper to taste
Instructions
  1. [b]Directions for garlic[/b]
  2. Divide garlic into cloves and roll them in the olive oil to coat them-wrap in aluminum foil and bake at 350F for 40 minutes.
  3. Let the garlic cool and mash with a fork.

  5. Peel and boil potatoes till tender
  6. Add all ingredients and mash with a mixer or potato masher. If you want the mashed potatoes to be a little creamier add a little milk or cream.
