Beef Enchiladas Recipe

I wanted something a little different for the holiday weekend so I chose this Enchiladas Recipe. This recipe calls for using Tortillas corn wraps and unfortunately I don’t usually have very good luck forming them; they always seem to crack. This recipe calls for placing them in the sauce to soften them up, using the hot sauce and liquid, which adds some moisture and heat. I was surprised how well I was able to use the Tortillas wraps after they soaked in the sauce for a few seconds. Other than wrapping, this is a simple recipe that doesn’t require a lot of prep time. Cooking time is also minimal so you can have a one dish dinner on the table in about an hour.

Beef Enchiladas Recipe

Ingredients
  • 1 pound ground beef
  • 1 teaspoon salt (divided)
  • 1 Medium onion (chopped)
  • 1 cup chopped green olives
  • 2 cups shredded cheddar cheese
  • 2 cans tomato sauce (8 ounces each)
  • 1 can tomato paste (6 ounces)
  • 2 cups water
  • 1 can concentrated tomato soup
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1/ 2 cup olive oil
  • 12 corn Tortillas
  • 1 can re-fried beans (16 ounces)
Instructions
  1. Preheat oven to 350F.
  2. In a large skillet brown the burger and onion until burger is no longer pink inside. Drain, mix in the olives, 1/2 teaspoon salt, and set aside.

  4. In another skillet or medium sauce pan mix together the tomato sauce, tomato paste, olive oil, tomato soup, 1 cup of shredded cheddar, and water. Season with 1/2 teaspoon of salt, chili powder and garlic powder; Simmer for 20 minutes. Pour about a cup of the mixture in the bottom of a 9 x 13 casserole dish. In another small sauce pan heat the re-fried bean just warm enough to work with.

  6. Place each Tortilla in the hot tomato sauce, one at a time as you wrap them, first with the meat mixture, and then a couple spoons of re-fried beans. Wrap them and place them seam side down in the casserole dish. Top with the rest of the sauce and the shredded cheddar.
  7. Bake for 20-30 minutes or until hot and bubbly.
  8. Serve Hot
