I like preparing stir fry recipes, so when I came across this Sweet and Sour Sausage Stir Fry Recipe, I thought I would give it a try. It is obvious this is not your standard stir fry but the blend of the pineapple with the smoked sausage was a good combination of flavors. This is a lightly seasoned recipe that calls for low sodium soy sauce so if you are used to kind of a salty taste in you stir fry you may want to add some salt to taste. This is a simple recipe with not much cooking or prep time; so if you’re in a hurry you can have dinner on the table pretty fast. I prepared the recipe as written I was happy with the results. - 1 16 ounce package smoked sausage (I used smoked Polish Sausage) cut into 1/ 2 inch pieces.
- 1 medium onion (sliced lengthwise)
- 1 cup shredded carrots
- 1 can unsweetened pineapple chunks (undrained)
- 1 tablespoon cornstarch
- 1 teaspoon ground ginger
- 6 tablespoons water
- 2 tablespoons reduced sodium soy sauce
- Cooked white rice
- Brown sausage in a nonstick wok, or large frying pan.
- Add the onion, carrots, and stir fry until crisp tender. Then drain the pineapple reserving the juice; add the pineapple to the sausage mixture.
- In a bowl combine the water, ginger, pineapple juice, soy sauce and mix until smooth. Add the mixture to the skillet or wok, bring to a boil, and cook until thickened.
- Serve over hot rice
