My wife picked up some smoked sausage on sale at our local market (was such a good price she couldn’t resist).  I was planning on some type of casserole dish for supper so I decided to give this Smoked Sausage with Penne Recipe a try.

This is a simple recipe that doesn’t require a lot of prep or cooking time. The end result is a cheesy and rich casserole dish. Give this one a try it’s really good!!

Ingredients
  • 2 cups uncooked penne pasta
  • 1 pound smoked sausage (cut into ¼- ½ inch slices)
  • 1-1/2 cups milk
  • 1 can (10-3/4 ounces) condensed cream of celery soup (10-3/4 ounces undiluted)
  • 1-1/2 cups french-fried onions (divided)
  • 1 cup shredded mozzarella cheese (divided)
Instructions
  1. While pasta is cooking preheat oven to 375F.
  2. Cook pasta according to package directions for al dente; drain.
  3. In a large nonstick skillet brown sausage over medium heat for about 5 minutes.
  4. In a large bowl mix together the soup, milk, ½ cup French-fried onions, and ½ cup cheese until well combined and then fold the sausage and pasta into the mixture.
  5. Place the mixture into a 13 x 9 casserole dish, cover, and bake for 25 – 30 minutes or until mixture is hot and bubbly. Uncover and sprinkle the remaining cheese and onion over the top. Bake for an additional 5 minutes or until cheese is melted.

Sour Cream Noodle Bake Recipe

This Sour Cream Noodle Bake Recipe is another recipe that can be put together very quickly. This is a simple mildly seasoned recipe that you could spice up a little more to taste if you want to. I prepared the recipe as written and it was pretty good for a quick dish. My wife said she really enjoyed it. I was a little uncertain how the green onions would blend with the other flavors; they worked out well, but for my taste the next time I prepare this recipe I will leave then out.

Ingredients

8 ounces of egg noodles

1 pound lean ground beef

1 tablespoon butter

1 teaspoon salt

1/4 teaspoon garlic salt

1/8 teaspoon pepper

1 can tomato sauce (8 ounces)

1 cup Ricotta cheese

1 cup sour cream

6 green onions chopped

3/4 cup shredded cheddar cheese

Directions

Preheat oven to 350

1. Cook noodles according to package directions. Rinse and drain.

2. Using a large skillet brown the burger using the butter. Drain excess fat if needed. Mix in the salt, garlic salt, pepper and tomato sauce and simmer for about 5 minutes.

3. Mix the Ricotta cheese, sour cream and onions into the noodles.

4. Using a 2 quart casserole dish, sprayed or greased, alternate layers of the noodle mixture and meat; starting with the noodles, and ending with the meat. Top with shredded cheddar.

5. Bake at 350 degrees for 20 minutes, or until cheese is melted, and casserole is heated through.

Slow Cooker Creamy Chicken Fettuccine Recipe

As time goes on I think I use my slow cooker more and more. It is just so easy to prepare the recipes in advance and get on with things while dinner is cooking. Another great advantage with using a slow cooker is that the meat cuts are not quite as important because it seems like slow cooing will help tenderizes almost any cut. In this case it was a time issue. I needed to go out of town for the afternoon but did not think I would feel much like cooking when I got home. this Slow Cooker Creamy Chicken Fettuccine Recipe sounded really good and the bulk of the meal was prepared in the slow cooker. There is very little prep time with this recipe so if you’re in a hurry you can put it together quickly. I prepared the recipe as written but if you don’t like black olives or pimientos you can omit them.

Ingredients

1-1/2 pounds boneless skinless chicken breasts (cut into 1 inch cubes)

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/8 teaspoon black pepper

1 can condense cream of chicken soup (10 3 /4 ounces)

1 can condense cream of celery soup (10 3 /4 ounces)

4 ounces American cheese (cubed)

1 can black olives (2 1/ 2 ounces sliced and drained)

1 jar pimientos (diced and drained)

1 package fettuccine

Directions

1. Place cubed chicken in a slow cooker and sprinkle with the onion powder, garlic powder, and pour the 2 cans of condensed soup over the top.

2. Cook on low for 4 to 5 hours or until chicken is no longer pink inside. (High 3 to 4 hours)

3. Add the cheese, olives and pimientos and continue cooking until the cheese is melted.

4. While the cheese is melting cook the fettuccine according to the package direction.
