These Ricotta Meatballs are moist and delicious. This recipe doesn’t require many ingredients and is very simple to put together. The Ricotta cheese make the meatballs nice and moist so you can get away with using very lean ground beef; I used ground round for this recipe.

Ingredients
  • ½ medium onion (finely chopped)
  • 4 tablespoons olive oil (divided)
  • 3 cloves garlic (crushed and minced)
  • 1 pound of lean ground beef
  • 1 cup whole milk Ricotta cheese
  • ¼ cup chopped Italian parsley
  • 1 egg (beaten)
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • Pinch cayenne pepper or to taste
  • ⅓ cup dry breadcrumbs
  • 1 jar marinara sauce (24 ounces)
  • 1 cup water
Instructions
  1. In a large nonstick skillet using 2 tablespoons of the oil cook onion until translucent. Add the garlic and continue cooking until fragrant; place onion mixture in a large bowl. Mix in the ground beef, Ricotta cheese, parsley, egg, salt, pepper, and cayenne pepper until just combined. Add the bread crumbs and mix until thoroughly combined. (Hands work great for this.)
  2. Measure out about 2 tablespoons of the meat mixture for each meatball; form and set aside.
  3. In the same skillet using the remaining olive oil brown meatballs over medium heat on all sides; and then drain any excess fat if needed. Add the sauce and water to the meatballs, bring mixture to a boil, and then reduce the heat to a high simmer. Cook until meatballs are no longer pink inside – stirring occasionally while cooking. (about 30 minutes)
  4. Serve over spaghetti.

Baked Italian Spaghetti and Meatball Recipe
This Italian Spaghetti and Meatball Recipe is a little bit of work and takes some time, but it was well worth it. My Family just loved it. I think we have Spaghetti at my House for dinner at least once a week. This recipe is just great. Because there is a lot of baking it takes a little more time. You will love it!

Ingredients
  • Ingredients for Meatballs
  • 1 lb ground beef
  • 1 lb ground pork
  • 2 Large eggs, slightly beaten
  • 2 large egg, slightly beaten
  • ½ cup grated parmesan cheese
  • ⅓ cup Italian breadcrumbs
  • 1-2 tablespoon fresh minced garlic or Garlic Powder to taste
  • 1 teaspoon salt
  • 1 teaspoon fresh ground black pepper
  • ⅓ cup milk
  • ½ teaspoon dried oregano
  • 2 Tablespoons dried parsley
  • Ingredients for Spaghetti Casserole
  • 1 (16 ounce) package thin spaghetti
  • 3 tablespoons oil
  • 3 cups shredded mozzarella cheese, divided
  • 1 cup grated parmesan cheese
  • 3 large eggs, slightly beaten
  • 1 teaspoon salt (or to taste)
  • black pepper (to taste)
  • 2 (28 ounce) jars spaghetti sauce (or use your own favorite sauce)

Instructions

  2. Mix all ingredients together in a large bowl.

  4. Shape into small to medium size meatballs, place them on a baking sheet.
  5. Bake at 350F for 25 minutes or until fully cooked.
  6. While the Meatballs are baking prepare the Spaghetti Casserole Dish
  7. Boil the spaghetti in a large pot of boiling water until just al dente; drain then place into a large bowl.

  9. Toss the spaghetti with 3 tablespoons oil; cool slightly, then add in eggs, 1-1/2 cups Mozzarella Cheese, 1 cup Parmesan cheese, salt and pepper; using clean hands toss until thoroughly combined (you can use a spoon but hands are better!
  10. Place the spaghetti into prepared baking dish, then press down slightly with hands.
  11. Scatter the cooked meatballs over the spaghetti.

  13. Top with spaghetti sauce over the top making certain to cover the pasta completely.
  14. Cover with foil and bake 350 degrees for 45 minutes or until hot and bubbly.
  15. Remove from oven then sprinkle about 1-1/2 cups Mozzarella Cheese (or amount desired) over the top, then return to oven uncovered for 3-5 minutes or until the cheese has melted.
