How to BBQ Sweet Corn?
Sweet corn is the product of this mutation. In contrast to the kinds of field corn farmed for animal fodder, which are harvested when the kernels are dry and mature (the dent stage), sweet corn is chosen while it is still immature (the milk stage), and it is then cooked and consumed as a vegetable rather than as a grain. Because the maturity process includes converting sugar to starch, sweet corn does not keep well and must be eaten fresh, canned, or frozen before the kernels turn tough and starchy.
