Apple Muffin Recipe
It is a great year for apples in this part of Upper Michigan. The trees are just loaded. It is wonderful because there are so many different ways of cooking with them. Last but not least -when you are tired of cooking them. You can slice and freeze to make pies over the long winter. I decided to start the season with this Apple Muffin recipe. It is moist and delicious. Your family will love it!
Ingredients for Topping
1. 1/2 cup packed brown sugar
2. 1/3 cup flour
3. 1 teaspoon cinnamon
4. 2 tablespoons butter, melted

Directions for topping

Mix all together, until mixture forms crumbs.

Ingredients for Batter

1. 2 1/4 cups flour

2. 1 teaspoon baking soda

3. 1/2 teaspoon salt

4. 1 egg

5. 1 cup buttermilk ( you can substitute 1 teaspoon vinegar to 1 cup of milk for the Buttermilk)

6. 1/2 cup butter, melted

7. 1 teaspoon vanilla

8. 1 1/2 cups packed brown sugar

9. 2 cups diced apples

Directions for batter

1. Whisk together egg, buttermilk, butter, and vanilla.

2. Stir in sugar.

3. Without mixing, add flour, baking soda, salt and apples.

4. Stir just until combined.

6 Don’t over mix.

7. Spoon into muffin cups-about ¾ full

8. Sprinkle each muffin with topping.

9. Bake at 375 degrees for 20 minutes or until firm to the touch.

    how long does it take to make and is it easy because i have to choose a recipe to make at school

    Their is not a lot of prep time if you have everything on hand. Maybe 15 minutes to put it together plus the baking time.

    These turned out great..but next time I make them I might tweak them a tiny bit.

    A little sweet…maybe reduce the sugar..and I had tons of left over topping, I guess I went fairly easy on them, but 2 cups total sugar seemed like a lot.
