Slow Cooker Beef Barley Soup Recipe

I didn’t know it was soup month until after I decided to cook and post this recipe; just thought I would mention it. I just love the taste of barley in beef vegetable soup. It thickens the soup up and has a great taste and the beef  is so tender it just melts in your mouth. Prepare this Slow Cooker Beef Barley Soup Recipe before you head out in the cold in the morning and you will come home to a hardy and hot bowl of Beef Barley Soup. Enjoy

Ingredients
  • 1-1/2 lbs beef stew meat
  • 1 tablespoon canola
  • 1 14-1/2 oz can of diced tomatoes
  • 1 cup chopped onion
  • 1 cup diced celery
  • 1 cup sliced fresh carrots
  • ½ cup chopped green pepper
  • 4 cups beef broth
  • 2 cups water
  • 1 cup tomato sauce
  • 2\3 cups medium pearl barley
  • 1 tablespoon dried parsley
  • 2 teaspoons salt
  • 1-1\2 teaspoon dried basil
  • 1\2 teaspoon black pepper
Instructions

  2. Brown meat in the oil over medium heat.
  3. In a 5 quart slow cooker combine all the ingredients and stir in the meat.

  5. Cook 8 to 10 hours on low or until meat is tender.

    I am so thankful I found this website! I was craving my mom’s barley soup which was very basic and yet satisfying. I haven’t cooked with barley before. I love the set it and forget it crock pot way. The enticing aroma took over the house throughout the day. It was torture as I was longing to sneak in a taste I only regret cutting the recipe in 1/2 as I was cooking for two. We may have to filp a coin to see who gets leftovers for lunch tomorrow.
