These Apple Pumpkin Muffins are a perfect combination of fall flavors. These muffins didn’t take the most perfect picture, but don’t let that fool you they are delicious.

I diced the apples a little too thick but they were still really good.

Ingredients
  • 2 ½ cups all-purpose flour
  • 2 cups sugar (I used Splenda)
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon salt
  • ¼ teaspoon nutmeg
  • 2 large eggs
  • 1 cup canned pumpkin
  • ½ cup vegetable oil
  • 2 cups finely chopped tart apples (I used Paula reds for this recipe because that is what I had on hand.)
Instructions
  1. In a large bowl mix together the first 7 ingredients until well combined.
  2. In a medium size bowl whisk together eggs, pumpkin, and oil. Add the wet ingredients to the dry ingredients and mix until just moistened, and then fold in the apples.
  3. Using lightly sprayed muffin cups, or liners, fill them ⅔’s full with the batter.
  4. Bake at 350F for 30 – 35 minutes; cool for 10 minutes before removing from the pan.

It is a great year for blueberries in upper Michigan this summer. I decided to put some of the berries to good use and put together these blueberry muffins. These blueberry muffins are moist and delicious.

I think I went overboard with the blueberries a little bit, but no matter they are so good; but 1 cup would be just right. I also used Splenda instead of sugar.

Ingredients
  • 1 ¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup sugar (I used Splenda)
  • ⅔ cup whipped cream cheese
  • ½ cup half and half
  • 2 eggs
  • ¼ cup vegetable oil plus 1 teaspoon
  • 1 cup fresh blueberries
Instructions
  1. Preheat oven to 350F.
  2. Lightly spray muffin tin with cooking spray – 12 regular or 6 jumbos; can also use paper liners.
  3. In a large bowl whisk together all the dry ingredients – I included the sugar in this mixture.
  4. In another bowl mix together the eggs, cream cheese, half and half, and vegetable oil until well combined. Pour the dry ingredients into the wet ingredients and mix until batter is smooth and then gently fold in the berries.
  5. Divide batter evenly between the muffin cups and bake until golden brown and a tooth pick inserted comes out clean. (10 – 15 minutes for regular – 20 -30 minutes for jumbo)

Ingredients
  • Streusel Topping
  • 2 ½ tablespoons all-purpose flour
  • 1 ½ teaspoons butter
  • 1 tablespoon brown sugar (packed)
  • 1 tablespoon granulated sugar
  • pinch of salt
  • 3 tablespoon chopped pecans
  • Muffins
  • 6 tablespoons all-purpose flour
  • ¼ teaspoon baking powder
  • ½ cup pecans (toasted and cooled)
  • ¼ cup granulated sugar
  • 1 large egg (room Temperature)
  • 3 tablespoons milk
  • 1 ½ tablespoons butter (melted)
  • ½ cup fresh cranberries
  • 1 teaspoon confections sugar
Instructions
  1. Directions for topping
  2. In a small bowl mix together the flour, butter, brown sugar, salt, and granulated sugar until mixture resembles wet sand. (a fork works good for this or use your hands) Mix in the pecans and set aside.
  3. Muffins
  4. In a medium size bowl whisk together the flour, baking powder, and ¼ teaspoon salt; set aside.
  5. Place the pecans and sugar in a food processor and process until mixture resembles coarse sand.; and place mixture in a large bowl.
  6. Mix in the egg, milk, and melted butter until thoroughly combined. Add the flour and mix until just moist; set aside 30 minutes until thickened.
  7. While batter is resting preheat oven to 375F and spray 4 muffin cups with cooking spray. Place cranberries, confections sugar, and a pinch of salt in the food processor and process until coarsely chopped.
  8. Mix the cranberry mixture into the muffin batter and divide the batter equally among the 4 cups. Top evenly with the Streusel topping and bake for 18 – 20 minutes or until golden brown and a tooth pick inserted comes out clean.
  9. Let cool for 10 minutes on a wire rack, remove from tin, and cool for at least another 10 minutes before serving.

Ingredients
  • ⅓ cup granulated sugar
  • ⅓ cup plus 8 teaspoons all-purpose flour
  • 8 teaspoons brown sugar (packed)
  • 1 teaspoon cinnamon
  • ⅛ teaspoon baking powder
  • ⅛ teaspoon baking soda
  • ⅛ teaspoon salt
  • 4 tablespoons unsalted butter (sliced into 4 pieces and chilled)
  • 1 large egg (at room temperature)
  • 2 tablespoons plus 2 teaspoons sour cream
  • confectioners sugar for garnish
Instructions
  1. Preheat oven to 350F. and spray 4 muffin tins with baking spray with flour. (I used cooking spray and lightly sprinkled the tins with flour)
  2. Place granulated sugar, 8 teaspoons of flour, and 4 teaspoons of brown sugar into the bowl of a food processor; process until well combined. Transfer 2 tablespoons of the mixture into a small bowl. To create the streusel whisk in the cinnamon, and 4 teaspoons of brown sugar into the small bowl mixture; set aside.

  4. Add ⅓ cup flour, baking powder, baking soda, and salt to the mixture in the food processor and mix until well combined. Place the butter pieces in the food processor and pulse until small pebbly pieces form. Add the egg and sour cream and mix until well combined.

  6. Place 1 tablespoon of batter into each muffin cup, divide the streusel between the 4 cups and place on top of the batter, and then top each cup with the remaining batter.

  8. Let cool for 10 minutes, remove to wire rack, and let cool for another 10 minutes.
  9. Sprinkle with confectioners sugar before serving.

Instructions
  1. Preheat oven to 375F.
  2. In a medium size bowl mix together the flour, baking powder, baking soda, and salt; set aside.
  3. In another bowl using an electric mixer beat the butter and sugar until light and fluffy. Beat in the eggs, one egg at a time,.mix in half of the dry ingredients and ⅓ cup yogurt. Mix in the remaining yogurt and dry ingredients a little at a time until incorporated.
  4. Spray a 12 cup muffin tin with cooking spray and distribute the batter evenly in the cups. (batter will be very thick an ice cream scoop works good for this)
  5. Bake for 25 to 30 minutes until golden brown; serve warm.

This is pretty much a basic recipe leaving a lot of room to add additional spices, but I wanted to keep this recipe as quick and simple as possible. The recipe was prepared as written – I thought the end result was pretty good.

  • 1 cup mashed sweet potatoes
  • 2 eggs
  • ⅔ cups all-purpose flour

  1. In a large bowl whisk together the sweet potatoes and eggs.
  2. Using a large spoon mix the flour and baking powder into the sweet potato mixture and then mix in the butter and milk. The mixture will be thick and lumpy. (If you want a thinner batter add extra milk a little at a time. (Be careful the batter thins quickly)
  3. Cook pancakes in a skillet, or over a griddle on medium high heat. Cooking until golden brown and bubbles form on top and edges start to firm up, flip and finish cooking.

You can use fresh or frozen blueberries in this recipe making it really nice if you have left over blueberries in the freezer from the summer. Serve them hot, with butter, and they are really good.

  • 3 cups whole-wheat flour
  • 2½ teaspoons baking powder

  • 1 cup granulated sugar
  • 2 large eggs
  • 4 tablespoons unsalted butter (melted)
  • ¼ cup vegetable oil
  • 1¼ cups buttermilk
  • 1½ teaspoons vanilla extract
  • 1½ cups blueberries
Instructions
  1. Directions for streusel
  2. In a medium size bowl using a fork mix all the ingredients together until mixture forms small bits and pea size chunks; set aside.

  4. In a large bowl whisk together the flour, baking powder, baking soda, and salt.
  5. In a medium size bowl lightly beat the eggs, and then mix in the melted butter, oil, vanilla, sugar, and butter milk; mix until well combined.
  6. Mix the wet ingredients into the dry ingredients until just moistened and then fold in the blueberries.
  7. Preheat oven to 400F.
  8. Spray a 6 cup jumbo muffin tin with cooking spray including the top of the tin. Using a heaping ½ cup measuring cup fill the muffin tins with the batter. (Cups will be very full) sprinkle the Streusel over the top of the muffins.
  9. Bake for 25 to 30 minutes until muffins are golden brown on top and a table knife inserted in the center comes out clean.
  10. Let muffins cool for about 5 minutes, remove them from the muffin tin, and cool on a wire rack for 5 more minutes – serve hot with butter.

Every holiday season I look forward to eggnog turning up in the grocery stores. If you like eggnog, here’s a delicious holiday breakfast treat. This is a basic pancake recipe incorporating the eggnog in place of the eggs and milk.

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 ½ cups eggnog
  • 2 tablespoons butter-melted
  • ½ teaspoon vanilla
Instructions
  1. In a large bowl combine the sugar, flour, baking powder, baking soda, and salt. Mix until well blended.
  2. Stir in the buttermilk, vanilla and butter; batter will be a little lumpy. (Depending on the consistency of the eggnog you are using you might want to thin the batter a little bit. I like it thick enough so it barley pours. If you need to thin it a little bit use regular milk.)
  3. Use a lightly greased griddle at 350 degrees. I use cooking spray-it works very well for this.
  4. Pour batter onto the griddle or pan so the pancakes are about the size you want them. Cook until the top is covered with tiny bubbles. Flip the pancake and cook until golden brown.

 

Banana Pecan Muffins Recipe

Wow! These muffins are so good. The combination of bananas, roasted pecans, and brown sugar is delicious. This recipe was originally created as a make a-head batter recipe. Place the batter in the muffin tins, cover with plastic wrap, and freeze them. Remove the muffin batter from the muffin cups and place them in zip lock bags in the freezer until ready to bake. Baking time does change a little bit because you are baking them from frozen; bake for an additional 5 minutes added to the original recipe. I did not try freezing them but this is a large recipe – so you could bake half of them fresh, and freeze half. The combination of bananas, roasted pecans, and brown sugar is delicious. Give this one a try and enjoy.

  • 10 tablespoons unsalted butter (softened)
  • 1½ cups plain yogurt
  • 1½ cups bananas (thinly diced)
  • ¾ cup pecans (toasted and coarsely chopped)
Instructions
  1. This recipe will make 12 jumbo muffins – or 24 regular.
  2. Lightly spray muffin tins with cooking spray, or use liners. Preheat oven to 375F.
  3. In a medium size bowl whisk together the flour, baking powder, baking soda, salt, and nutmeg.
  4. In a large bowl using an electric mixer beat the butter, and sugar together until light and fluffy. Add the eggs one at a time, beating until well combined.
  5. Using the electric mixer on low speed mix in half the flour, followed by ½ cup yogurt. Mix in the rest of the flour and add the remaining yogurt ½ cups at a time; using a large spoon mix in the diced bananas and pecans.
  6. Divide the mixture evenly between the muffin cups. Bake jumbos for 25 to 30 minutes until muffins are golden brown and a tooth pick inserted comes out clean - bake regular size for 20 to 25 minutes.
  7. Serve hot with butter on top.
