Ingredients
  • 1 tablespoon olive oil
  • 3 medium zucchini (cut into ½ inch slices)
  • 2 garlic cloves (minced)
  • ¼ teaspoon salt
  • ¼ cup balsamic vinegar
Instructions
  1. In a large skillet over medium high heat using the oil cook zucchini until tender; add the garlic and salt and cook for an additional 1 minute. Remove zucchini from the skill and set aside on a plate.
  2. Pour the vinegar into the now empty skillet, bring to a boil, and cook until mixture is reduced to about half. Add the zucchini back to the skillet and toss to coat.

I have only eaten polenta a couple of times and I will have to say I was not very impressed. I was planning on preparing an Instant Pot recipe and it recommended serving the dish with polenta, so I decided to give it a try. My wife and I both were pretty impressed with this Polenta; it was outstanding. It does take a little time, but it is well worth the effort; we will be sure to make it again.

Ingredients
  • 4 cups water
  • 1 teaspoon salt
  • 1 cup cornmeal
  • 3 tablespoons butter (divided)
  • ½ cup shredded parmesan cheese
Instructions
  1. Place the water and salt into a medium size sauce pan and bring to a boil. Gradually add the cornmeal while constantly stirring with a whisk to avoid creating any lumps.
  2. Reduce heat to low and continue stirring until polenta starts to thicken. Cover and continue cooking for 30 minutes, stirring every 5 to 6 minutes with a wooden spoon.
  3. Polenta is done when it is creamy and all individual grains are tender. (should not be gritty at all)
  4. Remove from heat and stir in 2 tablespoons of butter – when butter is half melted mix in the cheese stirring until butter and cheese are completely melted; cover and let rest of 5 minutes.
  5. Top polenta with remaining butter and garnish with more cheese if desired,

This Baked Potato Wedges recipe makes a good side dish. I used them for a fish fry, and they went with the fish really well. There is very little prep time involved and they bake fairly quickly. So if you want to get away from the oil for fries give these a try.

  • 3 – 4 medium size potatoes (scrubbed with skin on)
  • 3 large eggs
  • ¼ cup fresh parsley (Chopped)
  • 1 tablespoon oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon red pepper flakes

Instructions
  1. Preheat oven to 375F.
  2. Slice potatoes in half and then slice again to quarter. Whisk eggs in a small bowl. In another bowl mix together the rest of the ingredients. Dip potato wedges in the eggs and then roll them in the spice mixture until well covered.
  3. Place wedges on a baking sheet lightly sprayed with cooking spray and bake for about 30 minutes or until potatoes are done.
  4. Let rest for 5 minutes and serve.

  • 1 ½ pounds chicken tenders (cut into 1 ½ inch pieces)
  • 1 cup buttermilk
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt to taste
  • 2 cups Ritz cracker crumbs (I used a food processor to crush the crackers – if you don’t have one place them in a food grade plastic bag and crush them with a rolling pin. They don’t have to be real fine)
  • ⅓ cup Panko bread crumbs
  • ¼ cup grated Parmesan cheese.
  • Oil for deep frying.
Instructions
  1. In a large bowl mix together the butter milk, garlic, paprika, and salt; toss the chicken in the butter milk mixture, cover with plastic, and refrigerate for about 2 hours.
  2. In a shallow dish like a pie plate whisk together the Ritz cracker crumbs, parmesan cheese and panko bread crumbs.
  3. Preheat deep fryer to 350F.
  4. Roll the chicken pieces one piece at a time in the crumb mixture and deep fry in batches until golden brown and crispy. Place on paper towels to drain any excess oil.
  5. Serve as a stand-alone snack or with your favorite dipping sauce.
  6. Enjoy

I received an Instant Pot for a Christmas present from my son and decided to give it a try using an Instant Pot baked beans recipe. I have to admit I was a little skeptical that the beans would cook, and come out tender, with only 20 minutes of cooking time under pressure. The end result was a nice surprise, the beans were just right.

Ingredients
  • 1. 1 pound dried navy beans (cover and soak with water and 1 ½ tablespoons of salt for 8 – 16 hours in a cool place or refrigerator) The night before you make them works out fine.
  • 2. 6 strips thick cut bacon (sliced crosswise into ¼ - ½ inch pieces)
  • 3. 1 small onion (chopped)
  • 4. 2 cloves garlic (crushed and minced)
  • 5. 1 ¾ cups cold water
  • 6. ¼ cup dark molasses
  • 7. ¼ cup maple syrup
  • 8. 1 tablespoon soy sauce
  • 9. ¼ teaspoon salt
  • 10. 2 bay leaves
  • 11. Black pepper to taste
  • 12. 2 teaspoons Dijon mustard
  • 13. 1 teaspoon apple cider vinegar
Instructions
  1. Drain and rinse beans through a strainer.
  2. Place bacon in pressure cooker and turn heat to medium (Instant pot press the sauté button). Cook bacon until crispy. Stirring occasionally. Add the diced onion and black pepper; sauté for 1 minute. Add the garlic and continue cooking until fragrant (about 30 seconds)
  3. While bacon is cooking in a small bowl mix together the molasses, maple syrup, soy sauce and 1 ¾ cup of water until well combined.
  4. When bacon mixture is done pour in ½ cup of the molasses mixture and scrap the bottom of the slow cooker to scrap any drippings off the bottom. Add the beans, ¼ teaspoon salt, bay leaves, and mix in the rest of the molasses mixture making sure all the beans are covered.
  5. Close lid – and cook at High pressure for 20 minutes, and then allow 20 minutes of natural release. After 20 minutes move venting knob to venting position to release the remaining pressure and open lid carefully. Mix in the Dijon mustard and cider vinegar.
  6. Press the sauté button and cook to desired consistency. At this point you can also add salt and pepper to taste, extra vinegar, and molasses if needed.
  7. Note: In the original recipe they added additional molasses – I did the same.

I wanted baked beans, for a side dish, for a fish fry, but did not want to spend all day cooking them.

I found this recipe on my sons blog “blogchef.net”. The combinations of flavors looked really good and the recipe could be completed in about and hour.

I was just feeding a couple of people so we froze the leftovers for future fish fries. If you are looking for a good side dish give this one a try; it’s really good.

  • 2 tablespoons canola oil
  • 1 large onion (finely chopped)
  • 3 cloves garlic (minced)
  • ½ pound smoked sausage (sliced)
  • 3 cans pork and beans (15 ounces each)
  • ½ cup ketchup
  • ½ cup molasses
  • ¼ cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons prepared mustard
  • Dash of hot sauce or to taste
Instructions
  1. Preheat oven to 350F.
  2. In a large skillet over medium heat cook onion until tender. Add the garlic and sausage and continue cooking until sausage is browned. Mix in the beans, ketchup, molasses, sugar, vinegar, mustard and hot sauce.
  3. Pour mixture into a 13 x 9 casserole dish and bake uncovered for 45 minutes or until mixture is bubbly and thick.
  4. Serve Hot

I was planning on having stew for supper and thought hot biscuits would be great to have along with it. This Drop Biscuits Recipe looked like it was simple to put together, and I had all the ingredients on hand, so I decided to give it a try. It was just my wife and I for supper, and between the 2 of us there wasn’t a crumb left over.

Ingredients
  • 1 stick cold unsalted butter (cut into ¼ inch pieces – I threw them in the freezer for a few minutes to get them good and cold.)
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • ¾ cups whole mild ( I used some cream I had left over from the holidays and mixed it with 2% milk.)
Instructions
  1. Preheat oven to 400F.
  2. In a large bowl whisk together all the dry ingredients. Fold the butter pieces in and using your fingers or a pastry blender work the butter into the dry ingredients to form a pea like texture.(a food processors makes quick work for this)
  3. Add the milk and stir until just moist.
  4. Line a baking sheet with parchment paper, or lightly spray with cooking spray. Using ¼ cup measuring cup place dough on baking sheet about 2 inches apart. Bake until biscuits are golden brown, about 20 minutes, let cool a little bit and serve warm.

I was planning on serving mashed potatoes with dinner but was in search for a recipe that was a little different. This Baked Mashed Potatoes Recipe seemed to fit into the dinner menu very well. This mashed potato recipe is a little more work but it is worth the additional effort. This is a simple recipe but takes a little more time because you have to precook the potatoes and mash them before they go into the oven which requires an additional 20 minutes of cooking time. I followed the recipe as written and the end result was a nice cheesy, creamy mashed potato dish; topped with gray it was delicious.

  4. In a large skillet add mushrooms, butter and garlic. Sauté until mushrooms are semi soft. Set aside.
  5. In a large sauce pan cover the green beans with the chicken stock and cook until tender. Drain the beans but don’t rinse.
  6. In a large bowl combine Cream of Mushroom Soup, cooked mushrooms, Parmesan Cheese, pepper and onion rings. Mix thoroughly. Gently mix in the Green Beans.
