It is a great year for apples in this part of Upper Michigan. The trees are just loaded. It is wonderful because there are so many different ways of preparing them.
Last but not least -when you are tired of cooking them, you can slice, and freeze to make pies over the long winter.
I decided to start the season with this Apple Muffin recipe. It is moist and delicious. Your family will love it!

Apple Muffin Recipe

Ingredients for Topping
- 1/2 cup packed brown sugar
- 1/3 cup flour
- 1 teaspoon cinnamon
- 2 tablespoons butter, melted
Ingredients for Batter
- 2 1/4 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 1 cup buttermilk ( you can substitute 1 teaspoon vinegar to 1 cup of milk for the Buttermilk)
- 1/2 cup butter, melted
- 1 teaspoon vanilla
- 1 1/2 cups packed brown sugar
- 2 cups diced apples
Instructions
Directions for topping
- Mix all together, until mixture forms crumbs.
Directions for batter
- Whisk together egg, buttermilk, butter, and vanilla.
- Stir in sugar.
- Without mixing, add flour, baking soda, salt, and apples.
- Stir just until combined.
- Don’t over mix.
- Spoon into muffin cups about ¾ full
- Sprinkle each muffin with topping.
- Bake at 375 degrees for 20 minutes or until firm to the touch.
