Simple Blueberry Muffin Recipe
It amazes me every time I see a Muffin Mix in the store. There seems to be no sense why you would use a packaged mix when it is so easy to create them from scratch.
This Simple Blueberry Muffin Recipe is tops. Very easy to make and is rich and delicious with Blueberry flavor. You can use fresh or frozen Blueberries.
In this batch I used frozen we had stored in the freezer. Enjoy!

Simple Blueberry Muffin Recipe

Ingredients

  • 1/2 cup butter or margarine, at room temp
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 1/2 cups fresh blueberries or frozen blueberries
  • 2 cups all-purpose flour
  • 1/2 cup milk

Instructions

  1. Preheat oven to 375°.
  2. Grease 18 regular-size muffin cups (or 12 large size muffins).
  3.   4. In bowl, mix butter until creamy. Add sugar and beat until pale and fluffy.
  5. Add eggs, vanilla, baking powder, and salt. Mix with mixer till combined.

  7. With spoon, fold in half of flour then half of milk into batter; repeat.
  8. Fold in blueberries.
  9. Spoon into muffin cups; about ¾ full. Bake for 20 – 25 minutes until muffins are golden brown and toothpick inserted comes out clean.
  10. Cool and Enjoy!

    Do frozen blueberries need to be thawed? (they measure different when they thaw–so if they are used thawed, how many cups?)

    can i use soy milk instead of milk?? also can i use 1 teaspoon of baking powder?

      I haven’t tried this recipe other than the way its listed. The way you want to do it should work-just might come out a little different.

    i made these this morning and they were really good, my sister doesn’t like blueberry muffins so i just put aside 1/4 of the batter. And instead of 2 1/2 cups of blueberry’s i put 2 cups into the 3/4 of batter and with the 1/4 batter i took out i put a banana in it and my sister said it turned out really good! thanks

    I dont know what I did wrong but my muffins were not fluffing up..they came out flat 🙁 please help

      Hi Julia,
      It sounds like you left out the baking powder or possible the powder you are using is to old. I hope this helps.
