This is the best. If you like sweet and sour you will love this Simple Meatloaf Recipe. It is one of the best, with not much prep time. This is not your ordinary meatloaf. The flavor is outstanding.
The one person in our family that doesn’t like Meatloaf changed his mind after I made this recipe. Serve with Mashed Potatoes and Enjoy!

Simple Meatloaf Recipe

  • 1 1/2 lbs ground beef (ground shoulder roast is good)
  • 1 slice bread (broken or chopped finely)
  • 1 egg
  • 1 small onion, finely chopped
  • 1 teaspoon table salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons ketchup
  • 1/2 cup whole milk


  • 4 tablespoons apple cider vinegar
  • 4 tablespoons dark brown sugar, packed firm (to taste)
  • 1/2 cup ketchup


Meat Loaf

  1. Combine meatloaf ingredients and place into a loaf baking dish.
  2. Smooth out top.


  1. Combine sauce ingredients and pour on top and sides of meatloaf.
  2. Bake at 350°F about 1 hour to 1 hour 15 minutes or until done. 170F with a meat thermometer.

  1. I made this meatloaf as my first meatloaf. I was nervous, because I didn’t want to mess up such a fundamental meal, but with this recipe I nailed it! This meatloaf was amazing! My husband said it might be the best thing I’ve ever made! I didn’t have the apple vinegar, so I left that out, and I added a dash of Worcestershire to the meat mixture, just because we love it! It turned out great!

  2. This meatloaf turned out really great. I tweaked it a little bit since I didn’t have any apple cider vinegar. Instead I used mustard and pickled jalapeno juice, also added a couple tbs of mustard to meat mixture and forgot to add milk. But it turned out so good, I really don’t know why the milk is needed.

  4. Just made this tonight and it is the first meatloaf in years that we actually enjoyed eating!!! This is now my go to meatloaf recipe. I forgot to put in the onions (had them, just distracted by children) and it was still incredible. So glad you shared this!

  5. Note: added 1/2 tbsp-1 tbsp worcestershire sauce,
    instead of 1 slice of bread I used 1 cup Italian bread crumbs,
    used 2% milk instead of whole milk,
    I had to add a little bit more milk as it was looking dry, maybe 3/4 cup bread crumbs is enough
    sauted onions in butter until they were soft, let them cool before adding them

    I made this for my husband tonight for his dinner. On the weekdays we usually don’t get to eat dinner, so I cook and he eats whenever he gets home. We haven’t been married for that long and I am a relatively new cook, so making his favorite dish, is a bit daunting. So as I was getting out of the shower I hear a knock on the door, and it’s my husband. He’s still got food in his mouth, he gives me a sweet little kiss, swallows his food, and he says “I can’t stop eating this, it’s amazing.” He even went as far as to say, that it is better than his mom’s meatloaf! Holey Moley! I can’t stop smiling =D thank you for sharing this recipe, it was super easy, juicy, tasty and it turned out so much better than the first meatloaf recipe I tried. This is going in my recipe folder for life. <3

  7. This meatloaf was so good!! And easy!! Which was great cuz it was my first time to cook meatloaf. I’m a beginner when it comes to cooking and I found this recipe on Pinterest. I followed the recipe exactly!! But for some reason it came out a little soupy, the meatloaf was fine but there was a lot of liquid in it and I believe it could be the grease. Not really sure but I just drained it and it was fine. What did I do wrong? Should I use leaner beef next time?? Cuz I will be making it again, the boyfriend loved it!! Thanks!!

  8. I make mine very similar ( I use seasoned bread crumbs) Just wanted to say to Summer: I use all that soupy goodness from the pan to make the worlds best tomato gravy that compliments the meatloaf to perfection!!!!

  9. the 4 tbls ketchup is for the meat mixture and the 1/2 cup ketchup is for the sauce. I used panko for the breadcrumbs, omitted the onions, a splash of A1 sauce and family loved it

  10. A good sauce is easy to make as well: Make a rue (flour and butter), salt/pepper to taste, add milk and brown sugar. If the rue is too thin just add more flour. Kids love it because of the brown sugar.

  11. This was my first attempt at making meatloaf. Thank you so much for this amazingly yummy recipe. It was so good! My husband wasn’t home when I was making it so when I served it to him he asked if it was store bought store. In my proud voice I said “Nope, I made it from scratch!” he said it was really good. My picky 3 years old and my 17 months old cleaned up their plates and went on to eat more from their dad’s plate. Yeah! it was that good!

    • I haven’t tried either of these techniques with this recipe but that doesn’t mean they wont work – this recipe with turkey would be interesting. If you try it let me know how it turns out.

  14. I am not a meatloaf eater, but my partner is. He was gone for a week on a work trip and I decided to prepare meatloaf for his return. Easy to prepare and I followed it exactly except for a longer cooking time needed to reach desired temperature. Very good favor and moist. He loved it! Served with mashed potatoes, turnip greens, deviled eggs, and cornbread. I will return to this recipe again and again. Thank you!

  15. Made this tonight, as my husband has been asking for a me to find a recipe for sweet and sour meatloaf. I myself am not a fan of meatloaf at all, however, this was very good. I served it with homemade mac and cheese and green beans…..very yummy!! Will definitely be making it again. 🙂

  16. this sounds great. I also do a sauce made of yellow mustard(2tbls)ketchup(about 3 to 4 tbls)and brown sugar. I add as much as I think is good so no measurement on the sugar. put it on about 20 minutes before meatloaf is done. hope you like it.

  18. Love this recipe. I made it with a lb of ground beef and a lb of Italian sausage. Added one more egg and two slices of bread. My partner loves when I made this meatloaf. It’s his favorite meat dish.

    • No the vinegar doesn’t make it sour – actually the sauce is quite sweet.
      I do think a BBQ sauce would work. It will probably change the flavor a lot depending on the brand sauce you use.

I’d recommend the apple cider vinegar as it adds such a wonderful flavor !!! AMAZING … I’ll be making this for my bf’s mom when I finally meet her..   20. I made minor substitutions on this. I added chopped bell pepper and used Pepperidge Farm dressing mix instead of bread. This is the most amazing meatloaf I have ever found. Even people who don’t like meatloaf will find it hard to not like this. I served with mashed potatoes and garden peas. Yummy !!!!!

  21. I would use apple cider vinegar instead of white vinegar. White is quite harsh.Aapple cider vinegar flavor blends marvelously with sweet things such as brown or white sugar or honey. I’m ansious to make this recipe.

  22. Made this meatloaf three times now in the past two months. The only thing I changed was the Apple Cider Vinegar (didn’t have any). Used white Vinegar instead.

  23. I NEVER leave comments or reviews (mostly because I’m lazy haha), but this recipe deserves a review. This is my GO-TO recipe for meatloaf! My family, including one major meatloaf hater, absolutely loves this. I pinned this ages ago and have made it at least once every month at home, and I even triple the recipe to make every time I visit my sister in Michigan. It comes out so moist and flavorful. Preparation is simple, quick, and easy. I make this true to the recipe. During the preparation, I put the torn up bread in the bowl first and then the milk so that the bread soaks it up and really keeps the moisture in the meat. Then I add the remaining ingredients, and lastly the meat. Thank you so much for sharing this recipe! It’s in the oven right now – smells great and we can’t wait!

  24. I have to say this is honestly the BEST meatloaf ever! I haven’t previously been a fan of meatloaf and this did me in. Hubby said best meatloaf he’s ever had and made me make it for all the family when they came to visit :)! I do a couple substitutions though but it’s just our preference… I use 1C of Panko instead of sliced bread and also add about a Tbsp of worceshire sauce to the meat mixture. For the people asking about a lower fat meat, it’s perfect. We actually prefer lower fat meat and I think it made this meatloaf even better… If that’s possible!

  25. One of the worst recipes for meatloaf I have ever tried…Will NOT use it again. The power of the vinegar is way to strong and it makes the taste of the meatloaf just awful. Will use the meatloaf recipe WITHOUT that sauce.
