- 4 boneless pork chops (1-1½ inches thick)
- 1 tablespoon cooking oil
- 1 medium onion (chopped)
- 1 can tomato sauce (15 ounces)
- 2 tablespoons brown sugar
- 1 teaspoon salt (or to taste)
- Black pepper to taste
- ¼ teaspoon thyme
- 1 cup uncooked long grain white rice
- 1½ cups chicken broth
- In a large skillet using the oil, lightly brown the pork chops and onion over medium high heat.
- Reduce the heat to a simmer and mix in the tomato sauce, and then add the brown sugar, salt, pepper and thyme. Stir in the chicken broth, mix in the rice, and simmer on low heat for about 30-40 minutes or until pork chops are done and rice is tender.
