For some reason, our local market’s bakery does not make Oat Bran Muffins. My wife really likes them and right now our only way to get them is to make them.
I guess if you have a Cooking Blog this should be the only way. This oat bran muffin recipe is excellent, it’s simple to make, and there is very little cooking or prep time.
Within a half an hour you can have hot muffins sitting on the breakfast table. Enjoy

Simple Oat Bran Muffin Recipe

Ingredients

Scale
  • 2 cups Oat Bran hot cereal uncooked
  • ¼ cup firmly packed Brown Sugar
  • 2 teaspoons Baking Powder
  • ½ teaspoon Salt
  • 1 cup Low Fat Milk ( 2% or skim )
  • 2 Egg Whites, slightly beaten
  • ¼ cup Molasses
  • 2 tablespoons Vegetable Oil

Instructions

  1. Preheat oven to 425 F
  2. Line 12 medium muffin cups with paper baking cups or spray the bottoms with non-stick cooking spray.
  3. Combine all the dry ingredients except the brown sugar and mix well.
  4. Separately mix together the milk, brown sugar, egg whites, molasses, and oil.
  5. Combine with the dry ingredients and mix until moistened.
  6. Fill prepared cups ¾ full.
  7. Bake 15 to 17 minutes until golden brown.
  8. In this batch, I added 1/2 cup of frozen elderberries because I had them on hand.
  9. You can do the same using blueberries or raisins if you choose.
