Olive Bruschetta Recipe

  • 1 french baguette or crusty french bread, cut on a bias into 16–20 slices
  • 4 garlic cloves, minced, divided
  • 10 ounces goat cheese, ricotta, or feta
  • 2 ounces finely grated Parmesan cheese
  • 4 ounces cream cheese
  • 8 ounces fresh grape tomatoes small to medium-diced
  • ¼ cup finely chopped sun-dried tomatoes,
  • ½ cup pitted kalamata or oil-cured black olives, finely chopped
  • ½ cup pitted green olives, finely chopped
  • 1 tablespoon capers, rinsed, drained, and finely chopped
  • 1 tablespoon fresh thyme leaves
  • 3–4 tablespoons extra-virgin olive oil, plus more for drizzling
  • kosher salt, to taste
  • Freshly ground black pepper, to taste
  • ½ cup of fresh basil, thinly sliced into ribbons
  • Balsamic vinegar or balsamic reduction, for garnish

Method

  1. Set the oven rack to the bottom and heat it to 400 degrees Fahrenheit. Spread olive oil on both sides of the baguette slices and put them on a baking sheet. Put half of the minced garlic on the top of each piece of bread. Put the bread in the oven and toast it for about 5–7 minutes, until the outside is golden brown and crispy but the inside is still a little soft. Remove, and sprinkle a little salt on it.
  2. Mix goat cheese, cream cheese, Parmesan, and the rest of the minced garlic in the bowl of a food processor until fluffy and smooth. Salt and pepper can be added to taste.
  3. Mix grape tomatoes, sun-dried tomatoes, olives, capers, thyme, and olive oil in a medium bowl. Salt and pepper can be added to taste.
  4. Spread the goat cheese mixture on the crostini slices evenly, and then put the olive mixture on top. Add basil ribbons to the top. Add balsamic vinegar and a few cracks of black pepper to finish.
