This Slow Cooker Meatballs and Marinara recipe takes some prep time but it is well worth the effort. A little bit of time is saved by using a microwave instead of the oven to firm up the meatballs before they go in the slow cooker.

This is a large recipe that would be great for a potluck or party. If you’re not feeding that many people you could easily cut the recipe in half.

  • 2 tablespoons olive oil
  • 2 medium onions (finely chopped)
  • 1 can tomato paste (6 ounces)
  • 6 garlic cloves (crushed and minced)
  • 1 tablespoon oregano
  • ½ teaspoon red pepper flakes
  • ¼ teaspoon salt
  • Ingredients for Marinara
  • ½ cup red wine
  • 2 cans crushed tomatoes (28 ounces each)
  • Ingredients for Meatballs
  • 4 ounces Italian sausage
  • 1 ¼ pounds lean ground beef
  • ½ cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • 2 garlic cloves (crushed and minced)
  • ¾ teaspoon salt
  • 3 tablespoons milk
  • To finish marinara
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  1. In a Dutch oven over medium heat mix together the onion, olive oil, tomato paste, garlic, oregano, red pepper flakes, and salt. Cook until onions are softened and slightly browned. Place half of the onion mixture in a large bowl and set aside.
  2. For the marinara add the wine to the onion mixture in the Dutch oven and cook until mixture starts to thicken. Mix in the crushed tomatoes and pour the mixture into the slow cooker.
  3. Add all the meatball ingredients into the large bowl with the onion mixture, and using your hands mix until well combined. Form into 12 – 2 inch meatballs and place them on a large plate. Microwave for about 7 minutes until meatballs firm up and start to render some fat.
  4. Work the meatballs into the marinara sauce and cook covered until meatballs are done and sauce is slightly thickened (4 – 5 hours on low). Let settle and skim off any fat that is on the surface. Mix in the remaining parmesan cheese – salt and pepper to taste and serve over spaghetti.

Chicken Tetrazzini Recipe

This Chicken Tetrazzini Recipe takes quite a bit of time to put it together. There’s nothing hard about the recipe, but to connect it all together does take some work. I was kind of pinched for time again, but if figured if I cooked the chicken before I left the house it could be cooling well I did what I had to do in town. Things still got a little out of hand and I had supper on the table a little later than I planned.

The flavors in this recipe blend really well. If you don’t like using alcohol in your recipes, I think if you increased the chicken broth by 1/4 cup that would work in place of the Sherry. I prepared the recipe as written and if I make this recipe again I would change very little. It was excellent.

If you’ve never made Chicken Tetrazzini before give this recipe a try it’s excellent. Enjoy

Slow Cooker Italian Pork Chops Recipe

Melt in your mouth, juicy pork chops; that is what my wife had to say about this Slow Cooker Italian Pork Chops Recipe. I usually make spaghetti sauce from scratch, but when I saw this recipe called for store bought spaghetti seasoning mix I decided to give it a try. I purchased the store brand because there was a lot of difference in the price and it was excellent. There is a little bit of prep time that goes along with this recipe which is mainly the time involved, browning the pork chops, and then cooking the spaghetti in the end before you serve dinner. Other than that you can set it and forget it for most of the day.

I prepared this recipe as written and my wife and I thought this was an excellent dish. If you like using your slow cooker, give this Slow Cooker Italian Pork Chops Recipe a try. Enjoy

Southwestern Spaghetti Recipe

A touch of Italian integrated with some south of the border spices turns this Southwestern Spaghetti Recipe into a great tasting spaghetti dish. I have prepared a number of recipes like this one before, and I have to say, this one is about the best. I was in the mood for Italian spaghetti but at the same time I wanted something a little different; this did the trick. This is a simple recipe and I prepared the recipe as written, but there is room to make some changes, if you want to spice it up a little more. I panned on adding some sliced black olives, but my age is catching up to me; I overlooked them even though they were on my store list. Maybe next time-this one is going on my favorites list. If you’re in the mood for a little different version of Italian spaghetti, give this Southwestern Spaghetti Recipe a try. Enjoy

Italian Sausage Meatballs Recipe

Italian Sausage Meatballs Recipe

There are so many different types of recipes for meatballs- it’s amazing. This family loves spaghetti and meatballs so I like to try and change it up a little bit. The cool thing about this Italian Sausage Meatballs Recipe is that the flavors will automatically change with the sausage recipe that is being used. If you want to turn up the heat you cans use hot Italian, or if you prefer it on the lighter site you can go with mild or regular. For this recipe I used the local stores version of regular Italian sausage and it was excellent. The recipe here is doubled from the original because I have some big eaters. The number of meatballs will be largely determined by the size you want to make them; rolling meatballs can be a little time consuming, so for me, the bigger the better and my family likes them on the large side. So if you have a favorite Italian Sausage recipe give this Italian Sausage Meatballs Recipe a try, it is a great spaghetti and meatball combination. Enjoy
