How to Make Vienna Bread?

  • 4 g instant yeast
  • 150 g whole milk
  • 250 g all-purpose flour
  • 30 g granulated sugar
  • One teaspoon of salt (6 g)
  • 50 g unsalted butter, diced and softened at room temperature
  • Optional: chocolate chips (about 40 g/baguette)


  1. The milk should be about 43°C (110°F) warm. It should feel just a little bit warm when you touch it. Always check the temperature of a liquid before putting it in with the yeast. If it’s too hot, the yeast will die.
  2. Stir the yeast and warm milk together in a small spoonful bowl and let it sit for 10 minutes to dissolve. You can add a teaspoon of sugar if you aren’t sure if your yeast is working or not. If the yeast is alive, it will start to eat the sugar, which will cause a layer of foam to form on top of the milk.
  3. Mix the flour, salt, and (the rest of the) sugar in a large bowl. In the middle of the flour mixture, make a well.

  8. Make two balls of dough that are about 240 g each. Make a long loaf out of each ball. Or, for a chocolate version, flatten the ball of dough (with the seam facing up) with the palm of your hand and cover it with chocolate chips. Roll out the dough and mix it well so that the chocolate chips are evenly distributed throughout the dough. Roll the dough from the middle toward the edges to make a long loaf.
  9. Please put it on a baking sheet lined with parchment paper, seam side down. Cover it and let it rise for an hour or until it gets puffy.
  10. During this time, heat the oven on the standard setting to 180°C (356°F).
  11. Brush the two loaves with a bit of beaten egg (for shine and a nice golden color). If you don’t want to use eggs, you could use milk instead. Or you can skip this step. Use a sharp knife to cut the bread in several places (or kitchen scissors). You can sprinkle more chocolate chips on the bread if you want.
  12. Bake on the middle shelf of the preheated oven for 15-20 minutes, or until golden brown. Let them cool on a wire rack.
