Carrots should be trimmed and scrubbed. Cut the carrots in half lengthwise if they are larger than 1 inch in diameter. Place the carrots in a larger basin with 14 cups olive oil, one teaspoon salt, and 12 teaspoon pepper, and cut into broad diagonal slices 1 inch wide by 2 inches long (they will shrink while they roast).

Toss thoroughly and divide evenly between two sheet pans. (If you only use one, they’ll simmer rather than roast.) Roast the carrots for 20 minutes, stirring once, until soft. Toss all carrots with the maple syrup on one of the sheet pans and roast for 10 to 15 minutes until the edges are caramelized. Keep a close eye on them! Set aside for 10 minutes after tossing with a metal spatula.

Meanwhile, combine the cranberries and orange juice in a small saucepan, bring to a simmer, and put aside for 10 minutes.
