Potato salad is best made with little, waxy, thin-skinned potatoes. Potatoes that are tiny, yellow, white, or red are ideal (fingerling potatoes work, too). They cook quickly and don’t need to be chopped before cooking because they’re already little.
Potatoes should be left whole. Whole-cooked potatoes retain more of their inherent sweetness and flavor, and we also prefer the texture of potatoes that are cooked whole rather than sliced.
Other potatoes will work in their place if you don’t have tiny, waxy potatoes on hand; the texture will be slightly different. We avoid using russet (baking) potatoes since they tend to crumble.
How To Dress Up Your Potato Salad?
