Shrimp and Wild Rice Casserole Recipe

In the past the only chance I have had to work with wild rice was in combination; such as in the Uncle Bens seasoning packets. When I ran into some of the pure wild rice on sale I decided to give it a try. The texture of the wild rice is quite different then the long grain rice and I thought that it was pretty good. If you use the pure version of wild rice be sure to allow enough cooking time because it does take a lot longer to cook.

There are a number of wild rice recipes I wanted to try-so the first one I picked was this Shrimp and Wild Rice Casserole adapted from Food Network.

There is not a lot of prep time in this recipe, but because of the wild rice, there is a lot of cooking time. I followed the recipe as written and the shrimp were cooked perfectly, and the combination of flavors was delicious. Ingredients
  • 1 (8-ounce) package wild rice (8-ounce about 2 cups)
  • 4 cloves of garlic (minced)
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons butter
  • ½ green bell pepper (chopped)
  • ½ sweet onion (chopped)
  • 1 can condensed cream of mushroom soup (10¾ ounces)
  • 2 cups shredded sharp Cheddar cheese
  • Salt and pepper to taste
Instructions
  1. Cook the wild rice according to package directions. Drain
  2. While the rice is cooking chop up the vegetables and garlic. In a large skilled using the butter cook the vegetables until tender. Cover and keep warm.

  4. Pre-heat oven to 325
  5. In a medium sauce pan using 2 cups of water, and ½ teaspoon of salt; bring the water to a boil and cook the shrimp for 1 minute. Drain (Shrimp should be light pink)

  7. In the fry pan with the cooked vegetables add the cream of mushroom soup, 1 1/ 2 cups cheese, rice and shrimp. Salt and pepper to taste.
  8. Spoon the mixture into a 1½ quart casserole dish, top with the remaining cheese, and bake in the oven for 30 minutes or until hot and bubbly.

Simple Salmon Patty Recipe

Lent is starting to wind down as we get closer to Easter. I found it hard to believe that I did not have a salmon patty recipe on my blog. I don’t make these very often, but when I do, it provides something that is a little different into the menu. Canned salmon is not usually one of my favorite ingredients but during lent meatless recipes are so frequent I like to try and mix it up a little bit. I found that the hardest part was figuring out a side dish to go along with the salmon. Other than that, this is a very simple recipe that doesn’t require much time or ingredients. You can have moist and good tasting salmon patties on the table in less than a half an hour. This recipe does call for crushed red pepper as one of the ingredients so if you don’t like a lot of heat be careful with the amount you use, or eliminate it all together.

Ingredients
  • 1 can pink salmon (14¾ ounces remove skin and any excess bones)
  • ½ cup breadcrumbs
  • 3 tablespoons real mayonnaise
  • 2 eggs (beaten)
  • 1 tablespoon parsley
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil (can use vegetable oil)
  • 1/ 4 teaspoon red pepper flakes (or to taste)
Instructions
  1. In a medium bowl beat the eggs, and then add and mix together all the rest of the ingredients except the olive oil.
  2. Form the salmon into patties.
  3. Using a large skillet over medium high heat fry the patties in the olive oil until golden brown on both sides and heated through.
  4. Serve hot.

Deep Fried Tilapia Recipe

Deep Fried Tilapia Recipe

We have had a mild start to the winter here in Upper Michigan and the bay refuses to freeze, and because of the warmer weather, the inland lakes are even questionable. As a result I didn’t have much in the line of fresh fish on hand so I decided to give this Deep Fried Tilapia Recipe a try.

I really like pan fish, and for me, Tilapia is about the closest you can get in store bought fish to pan fish. It is probably not quite as healthy as Salmon, but there is absolutely no fishy taste.

This is a basic recipe that coats the fish really nice, resulting in a nice crispy, golden brown texture. I prepared the recipe as written and my wife and I really enjoyed it; but I’m sure you could spice it up a bit if you wanted to by adding some Cajun seasoning, or Old Bay.

With Lent a couple months away this Deep Fried Tilapia Recipe will go on my favorites list; it’s an excellent Deep Fried Fish Recipe.

Ingredients

2 Tilapia fillets

1/2 c. flour

Salt and pepper to taste

2 eggs

1/2 to 1 c. milk

Plain bread crumbs

Vegetable oil for deep frying

Directions

1. Rinse the Tilapia fillets in cold water and drain thoroughly; pat dry with paper towels. Cut the fillets into 2 inch pieces. (I cut each fillet into 4 pieces depending on the size of the fillet)

2. On a plate salt and pepper the flour to taste. Pour some breadcrumbs on another plate for coating.

3. In a bowl whisk together the 2 eggs with enough milk to equal 1 1/2 cups of liquid.

4. Roll the fish pieces in the flour, dip in the egg milk mixture, then roll to coat in the bread crumbs. Set aside to dry a little bit while the deep fryer is heating.

5. Deep fry at 350F until golden brown. Drain on paper towels and serve.

New England Style Clam Chowder Recipe

This New England Style Clam Chowder Recipe caught my eye and I decided to give it a try. I have made the Manhattan style Clam Chowder before, but for some reason never attempted this one. I thought; out of the can was great, so I figured the homemade should be even better. I was right! This New England Style Clam Chowder Recipe was delicious; my family loved it. This recipe is simple with not a lot of cooking or prep time and could very easily be used on Friday for Lent by eliminating the pieces of bacon, and just using the bacon for flavor. This recipe is supposed to serve 4, but if you have some big eaters, I would double it. Enjoy

New England Style Clam Chowder Recipe

Ingredients
  • 6 slices bacon
  • 1 medium yellow onion (chopped)
  • 4 potatoes (peeled and cubed)
  • 1 tablespoon all-purpose flour
  • 1-8 oz bottle clam juice
  • 1 cup heavy cream
  • ½ cup milk
  • 2 (6 ounce cans undrained) cans minced clams
  • 2 tablespoons chopped fresh parsley (chopped)
  • salt and pepper to taste
Instructions
  1. In a large saucepan over medium high heat, fry the bacon until crisp. Drain on paper towels, reserving the bacon fat in the pan.
  2. Crumble the bacon and set aside.
  3. In the same saucepan with the bacon fat, saute the onion until translucent, add the potatoes, then mix in the flour to coat and mix well.
  4. Pour in the clam juice, bring to a boil, reduce heat to low and simmer for about 15 minutes, or until potatoes are tender.
  5. Add the milk and cream, minced clams, and season with salt and pepper to taste.
  6. Cook until heated thoroughly, and serve.
