Ingredients
  • 2 ounces mild cheddar cheese (Don't use Pre shredded cheese)
  • 1½ teaspoons cornstarch (divided)
  • ½ cup grated Parmesan cheese
  • 1 teaspoon vegetable oil
  • ½ cup finely chopped onion
  • 1 garlic clove, minced
  • ¼ teaspoon dried thyme
  • ⅓ cup low-sodium chicken broth
  • ⅓ cup heavy cream
  • 12 ounces potatoes, peeled and sliced ¼ inch thick
  • ½ teaspoon salt
  • ¼ teaspoon pepper
Instructions
  1. Preheat oven to 425F.
  2. In a small bowl mix together the shredded cheddar and 1 teaspoon of cornstarch. In another bowl mix together the other ½ teaspoon cornstarch and parmesan cheese.
  3. In a 10 inch oven proof skillet using the oil over medium heat, cook onion until lightly browned. Add the garlic and thyme; continue cooking until fragrant. Stir in the broth, cream, salt, pepper, and then add in the potatoes. Bring mixture to a boil, cover, reduce heat to a high simmer and cook until potatoes are tender.
  4. Mix in the cheddar cheese and press the potatoes into an even layer. Sprinkle the Parmesan cheese over the top and bake uncovered in the oven until the cheese is golden brown.
  5. Let cool 10 minutes before serving.

I was in a hurry to put a side dish together so I decided on this Stove Top Macaroni and Cheese recipe. Usually I use the oven for most of my mac and cheese recipes but I was trying to save a little time. This recipe is simple and doesn’t call for many ingredients so there is a good chance you will have everything you need on hand to put this recipe together. I followed the recipe as written and the end result was a very creamy macaroni and cheese dish. I garnished the dish with paprika just to give it a little bit of color.   • 7 ounces elbow macaroni
  • 1/ 4 cup butter
  • 1/ 4 cup all-purpose flour
  • 1/ 2 teaspoon salt

Instructions

  • 8 ounces small pasta shells
  • ¼ cup butter
  • ¼ cup flour

Instructions
  1. Cook Pasta Shells according to package directions.

If you are looking for something really quick when the kids get home from school, or you just need a quick side dish, give this Simple Mac and Cheese Recipe a try.

This recipe caught my eye because of the use of the microwave. Except for heating and defrosting I don’t use the microwave very often; but when I saw this recipe I thought it was worth giving it a try. You can pretty much have the cheese sauce done just on time to mix it into the macaroni when it comes off the stove. This Simple Mac and Cheese Recipe tastes great and requires no oven time. However this is a small recipe and you may wish to double it depending on the age, and number you are feeding. Enjoy

Ingredients

1 cup elbow macaroni

1 cup milk

3 tablespoons all-purpose flour

Salt and pepper to taste

2 tablespoons butter

1 cup shredded Cheddar cheese

Directions

2 tablespoons butter or margarine

1 cup shredded Cheddar cheese

Directions

1. Cook pasta according to package directions for al dente; drain and set aside.

2. In a microwave-safe bowl, combine milk, flour and salt and pepper to taste; whisk or beat until smooth. Add butter and cheese.

Ingredients
  • 24 ounces dry fettuccine pasta
  • 1 cup butter
  • ¾ pint heavy cream
  • salt and pepper to taste

  • ¾ cup shredded Romano cheese

Instructions
  1. Cook Fettuccine to until al dente according to package directions.
  2. In a large saucepan, melt butter into cream over low heat. Add salt, pepper and garlic salt. Stir in cheese over medium heat until melted which will thicken the sauce.
  3. Add pasta to sauce using enough of the pasta so that all of the sauce is used and the pasta is thoroughly coated.
  4. Serve hot
