Here is another really good recipe for Friday during Lent. This is a simple recipe doesn’t require many ingredients and there’s a good chance you may have them all on hand already. You can serve this pasta recipe as a side dish with shrimp or fish, or serve it as the main dish.

 I think cooked shrimp added to the dish would be a delicious combination with the lemon and basil flavors.

Ingredients
  • 8 ounces pasta
  • 2 tablespoons butter (melted)
  • 1 tablespoon lemon juice
  • 1½ teaspoons dried basil
  • ¾ teaspoons salt
  • ¼ teaspoon black pepper
  • ¼ cup grated Parmesan cheese
Instructions

Pasta Shells and Cheese Recipe

It’s always great to have a good side dish siting in the recipe file, so if you need a recipe to go with those spur of the moment dinner decisions, there is one available without doing a lot of searching. This Pasta Shells and Cheese Recipe is much like macaroni and cheese except the texture is a little different because of the pasta shells. This is a simple recipe that does not require much prep or cooking time. This side dish can easily be prepared while the main dish is cooking. I prepared this recipe as written and the results were a creamy, and cheesy, Pasta Shells dish with excellent flavor.

Ingredients
  • 8 ounces small pasta shells
  • ¼ cup butter
  • ¼ cup flour
  • ½ teaspoon salt
  • 1 dash black pepper
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • Sliced green onions for garnish (optional)
Instructions
  1. Cook Pasta Shells according to package directions.
  2. While the shells are cooking melt the butter in a medium sauce pan on medium heat. Mix in the flour then add the salt and pepper and gradually stir in the milk. Continue cooking stirring constantly until mixture thickens. Then mix in the cheese-stirring until melted.
  3. Drain and rinse the pasta shells, then mix them together with the cheese sauce.
  4. Garnish with green onion slices if desired.

Classic Macaroni Salad Recipe

There are so many ways to put macaroni salads together it’s easy to forget how simple it is to throw together a quick and easy Classic Macaroni Salad. I was looking for a simple recipe to go along with a Grilled Honey Mustard Chicken Wings recipe; which is being used for my next blog post. I decided to go ahead and keep it simple, choosing this Classic Macaroni Salad Recipe.

This recipe pretty much like what you would purchase from the deli at your local market, so there is a lot of room for improvement, by adding some extra spices. I decided to keep the recipe as written; keeping it simple. This Classic Macaroni Salad Recipe makes a great side dish and can easily be prepared while the meat or your main course is cooking.

Ingredients

8 ounces elbow macaroni

1 cup real mayonnaise or salad dressing

2 tablespoons vinegar

1 tablespoon Dijon mustard

1 teaspoon sugar

1 teaspoon salt

1/4 teaspoon ground black pepper

1 cup celery (thinly sliced)

1 medium green bell pepper (chopped)

1/4 cup onion (finely chopped)

Directions

1. Cook macaroni according to package directions; drain and rinse with cold water until completely cool.

2. In a large bowl combine the mayonnaise, sugar, black pepper, vinegar, salt, pepper and Dijon mustard. Mix until blended.

Cheesy Noodle Casserole Recipe

This Cheesy Noodle Casserole Recipe makes a good side dish or a good main dish. This is kind of a small recipe so you may want to double it depending on the number you are serving. One of the things that caught my eye about this recipe is that it called for chopped salami and I thought that sounded quite good, so I put it on the supper menu for last night. This is a simple recipe and mildly seasoned. The salami helps season the dish. You could probably use almost any kind of processed meat like, pepperoni, bologna or hotdogs. Any of these favors I think would blend well with the recipe. If you’re looking for a good side dish, or just want to try something a like different; give this one a try and enjoy.

Ingredients

4 ounces of egg noodles (about 3 cups)

1 medium onion (finely chopped)

1/4 cup chopped green pepper

2 table spoons butter or margarine

1 tablespoon butter (melted)

1 can condensed cream of mushroom soup (10 1/2 ounces)

1 cup sour cream

1/4 cup milk

1 1/2 cup shredded mozzarella cheese (6 ounces )

1- 8 ounce package of salami (cubed)

3/4 cup soft bread crumbs (1 slice bread-use a blender to make these-works very well)

Directions

Preheat oven to 350F.

1. Cook noodle to al dente according to package instructions.

2. In a large skillet or sauce pan using the 2 tablespoons of butter over medium heat, cook the green pepper and onion till tender.

3. Mix in the sour cream, soup, and milk- then stir in the cheese, salami and the cooked noodles.

4. Pour into a 2 quart casserole dish.

5. Combine bread crumbs and the melted butter, and then sprinkle them around the edge of the casserole.

Bake 30 to 40 minutes until heated through and the breadcrumbs are browned on top.

Club Pasta Salad Recipe

I needed a side dish again to go with some pulled barbecued chicken sandwiches we were having for supper. One of my family members made this Club Pasta Salad Recipe before and it was really good; so I decided to give it a try. This is a small recipe so you may want to adjust it to the number of guests you are feeding. I think this would also be a good recipe for a pot luck, or church social type of thing.

The recipe is very simple, and I followed the recipe as is. This recipe calls for bacon bits, but when I have had it in the past, fresh bacon was used in place of the bacon bits. In both versions the salad was very good, but I think I prefer using the fresh bacon. The next time you need a side dish, give this one a try. Enjoy

 

Ingredients

2 cups uncooked shell pasta

1 (1 ounce) packet hidden valley ranch dressing mix

1/4 cup bacon bits

1/2 teaspoon onion powder

1/2 cup mayonnaise or salad dressing

1 1/2 cups smoked turkey breast (cubed)

1/2 cup cherry tomatoes (cut into fourths )

1/2 cup shredded cheddar cheese

4 cups bite-size pieces lettuce

Directions

1. Cook pasta until tender according to package directions. Let cool and chill.

2. In a large bowl combine Hidden valley ranch mix, onion powder, and bacon bits with mayonnaise and mix till well blended.

3.  Stir in chilled pasta and remaining ingredients except lettuce.

4. Serve over the lettuce pieces.

Shrimp Macaroni Salad Recipe

With the 4th of July coming up I thought this Shrimp Macaroni Salad Recipe would be a good choice for a recipe post. This is a very simple recipe that goes great with grilled burgers, chicken or pork on the grill. This recipe does not take long to prepare, but be sure to allow enough time for the salad to cool, and the flavors to blend. I followed the recipe as is; but you can add almost anything to your liking that would go good in a cold salad. If you are hosting a party or need a dish for a pot luck just double or adjust the recipe as needed. Ingredients
  • 1 pound dry elbow macaroni, cooked, rinsed, and drained
  • 2- 4 ounce packages of salad shrimp
  • ½ cup diced celery
  • 1/ 2 cup minced red onion, soaked in cold water for 5 minutes, drained
  • 2 tablespoon minced flat-leaf parsley
  • 1 cup diced vine-ripened tomato
  • 2 cups shredded cheddar cheese
  • 1 cup prepared mayonnaise
  • 1½ teaspoon dry mustard
  • 1 Tablespoon sugar
  • 3 tablespoons cider vinegar
  • ¼ cup sour cream
  • Salt and pepper to Taste
Instructions
  1. In a large bowl combine the macaroni, celery, onion, shredded cheddar, parsley, shrimp and tomato.
  2. In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt. Pour the dressing over the salad and stir to combine.
