With the lent season coming close I thought it would be a good time to post this Double Shrimp Casserole Recipe. This is another one dish recipe that doesn’t require much prep or cooking time. You can have this dish on the table in about an hour. this is a mildly seasoned recipe and as expected the cream of shrimp soup, and the salad shrimp go good together, and the mayo gives the casserole a nice,  creamy texture. Ingredients
  • 3 cups elbow macaroni
  • 1 can condensed cream of shrimp soup (10.5 ounce)
  • ¾ cup milk
  • ½ cup mayonnaise
  • ¼ cup celery (finely diced)
  • 1 tablespoon chopped onion flakes
  • ¼ teaspoon salt or to taste
  • 1 cup cooked salad shrimp
  • 1½ cups shredded cheddar Cheese
  • 1 cup Chow Mein noodles
Instructions
  1. Cook macaroni to package directions.
  2. Preheat oven to 350F.
  3. While macaroni is cooking in a large bowl mix together the soup, mayonnaise, milk, celery, onion and salt. Then stir in 1 cup cheese, shrimp and the noodles. Pour into a 1½ quart casserole dish.
  4. Bake uncovered for 30 minutes or until casserole is hot and bubbly. Top with additional shredded cheese and Chow Mein noodles; bake for an additional 10 minutes.
  5. Serve Hot

This is a great recipe for grilling fresh fish. This glazed salmon recipe is simple and quick to prepare.

What a great time of year. Even here in Upper Michigan the days are warming up. I just love getting the grill going on these nice spring days. It is time for the steelhead to run here so the salmon are coming close to the shore line. This is a great recipe for grilling fresh fish. I hope you enjoy.

Simple Glazed Grilled Salmon Recipe

Ingredients
  • 3 tablespoons dark brown sugar
  • 4 teaspoons prepared Dijon mustard
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 2 salmon steaks about 8 ounces ¾ to 1 inch thick
Instructions
  1. Mix together the brown sugar, mustard and soy sauce.

  3. Set aside 1 tablespoon of the glaze mixed with the rice vinegar.
  4. Brush one side of the salmon fillets with half of the glaze.

  6. Place on the grill glazed side down. Brush the top side of the salmon steaks with the rest of the glaze.
  7. Grill until slightly charred about 4 minutes-flip the steaks and cook about 5 minutes longer or until done.
  8. Drizzle the glaze mixed with the vinegar over the salmon and enjoy.
