This recipe looked so good and easy I had to give it a try. It requires a sauce that can be put together in just a few minutes, and there is a good chance you will have all the ingredients on hand.

The original recipe served the chicken and sauce over rice, but I decided to serve it with hash brown patties instead.

For a simple recipe it turned out super good – give this one a try.

Ingredients
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • ½ cup sugar
  • ½ cup soy sauce
  • ¼ cup cider vinegar
  • 1 clove garlic (crushed and minced)
  • ½ teaspoon ground ginger
  • ½ teaspoon black pepper
  • 8-12 skinless chicken thighs (I did 8 and it came out about right but there is enough sauce to do 12)
Instructions
  1. Mix all the ingredients together in a sauce pan except for the chicken. Bring the mixture to a slow boil over low heat stirring frequently until mixture thickens – off heat and set aside.
  2. Place chicken in a 13 x 9 baking dish lightly sprayed with cooking spray. Using a brush coat chicken Preheat oven to 425F.
  3. on both sides with the sauce.
  4. Bake chicken for 30 minutes brushing with sauce every 10 minutes. Flip chicken and bake for about another 30 minutes continuing to brush with sauce every 10 minutes. Cook until juices run clear or to a temperature of 185F.
  5. Serve over rice.

This is a simple recipe that can be served with a side dish or as a stand-alone meal. The stuffing mix gives the dish a nice crunch and the sour cream and chicken soup creates a nice creamy sauce.

Ingredients
  • 1 can condensed cream of chicken soup
  • 6 boneless skinless chicken breasts
  • 1 cup sour cream
  • 1 package stove top chicken stuffing mix
  • ½ cup shredded Parmesan cheese
  • ½ cup butter
Instructions
  1. Preheat oven to 350F.
  2. In a medium size bowl mix together the soup and sour cream until well combined.
  3. Place the stuffing in a food processor and pulse until fine crumbs form. Add the cheese and pulse one time to blend the cheese into the stuffing crumbs. (if you don’t have a food processor place crumbs in a food grade plastic bag and crush with a rolling pin)
  4. Arrange chicken on the bottom of a 13 x 9 baking dish and layer the soup mixture over the top, and then top with the stuffing mix.
  5. Bake for 50 – 60 minutes or until chicken is done. (165F)

I was short on time and needed a chicken recipe that was fast and good. When I ran across this Chicken Scallopini Recipe I thought it was worth giving it a try. Outside of the time it takes to bake the chicken breasts this is a recipe that is quick to put together. If you like lemon pepper chicken you are sure to like this recipe, with the dominating flavor being the lemon. This is a basic recipe with room to spice it up a little more if you choose to. I prepared the recipe as written and we really enjoyed it.

If you’re a little tight on time give this Chicken Scallopini Recipe a try-it has very little prep time. You will have chicken on the table in less than an hour.

Ingredients
  • 4 boneless skinless chicken breast halves
  • ¼ cup all-purpose flour
  • ¼ teaspoon black pepper
  • 1½ teaspoons garlic salt
  • ¼ teaspoon paprika
  • ¼ cup butter or margarine
  • 3 tablespoons water
  • 1 tablespoon lemon juice
  • ¼ teaspoon instant chicken bouillon
  • Parsley for garnish
  • 4 thin lemon slices
Instructions
  1. Preheat oven to 350F.
  2. in a shallow pan or pie dish mix together the flour, garlic salt, pepper and paprika.
  3. Roll the chicken in the flour mixture; then in a large skilled using the butter brown the chicken on both sides.
  4. Place the chicken into a shallow backing dish lightly sprayed with cooking oil. Cook until juices run clear or to an internal temperature of 160F. (This should take 20-30 minutes depending on size) Remove chicken and keep warm.
  5. In the same skillet over low heat stir in the water, lemon juice, and chicken bouillon, stirring to loosen the particles on the bottom of the pan. Add the four lemon slices and cook for about an additional 1-2 minutes.

This Baked Honey Mustard Chicken Recipe was so simple I felt guilty putting it on the table. This recipe has a delicious combination of ingredients; I was able to have dinner on the table in less than an hour. This recipe makes 6, but you could increase the amount it serves very easily just double or triple as needed. I prepared the recipe as written. Ingredients

 

6 skinless boneless chicken breast halves

Salt and pepper to taste

1/2 cup honey

1/2 cup prepared mustard

1 teaspoon dried basil

1 teaspoon paprika

1/2 teaspoon dried parsley

Directions

1. Preheat oven to 350 degrees F (175 degrees C).

2. Sprinkle chicken breasts with salt and pepper to taste.

3. Place in a lightly greased 9×13 inch baking dish.

4. In a small bowl, combine the honey, mustard, basil, paprika, and parsley. Mix well. Pour 1/2 of this mixture over the chicken, and use a brush to coat.

3. Bake for 30 minutes. Turn chicken pieces over and brush with the remaining 1/2 of the honey mustard mixture. Bake for an additional 10 to 15 minutes, or until chicken is no longer pink and juices run clear. (Internal temperature of 165F.)

Crispy Baked Chicken Recipe

I don’t use cornflake crumbs much, so when I saw this Crispy Baked Chicken Recipe I decided to give it a try. The recipe claimed it tasted like fried chicken except it was a lot healthier; because it was baked in the oven. I didn’t think it even came close to as good as the fried chicken I have prepared, but it was very good. The texture was very crispy, and it had really good flavor. This is a very simple recipe with very little prep time. The chicken turns out nice and juicy because of the crispy corn flake crumb coating. If you’re in the mood to try something a little different give, this Crispy Baked Chicken Recipe a try; it’s pretty good. Enjoy

Ingredients

1 cut up chicken (breast, thighs, legs and wings)

1/2 cup all purpose flour

Salt and pepper

6 cups cornflakes

2/3 cups buttermilk

2 tablespoons Dijon mustard

1/4 teaspoon cayenne pepper (or to taste)

1 1/2 teaspoons paprika

3/4 teaspoons ground sage

Directions

1. Preheat oven using center rack to 475F.

2. In a wide bowl (I use a glass pie plate for this) season the flour with salt and 1/4 teaspoon black pepper.

3.  Rinse the chicken in cold water and pat dry with paper towels. Roll each chicken piece in the flour to lightly coat.

4. Place the cornflake crumbs in a reusable plastic bag and crush using a rolling pin and place in a wide dish.

5. In a medium size bowl large enough to dip the chicken pieces, mix together the buttermilk, mustard, cayenne pepper, paprika and sage.

6. Dip each piece of chicken in the butter milk bath, then roll in the cornflake crumbs to coat.

7. Arrange the chicken pieces on a shallow baking sheet and bake for 15 minutes at 475.F. then reduce the heat to 375 and cook for another 20 minutes or until chicken is cooked though and crispy. (Juices should run clear and internal temperature should be 165F)

Chicken Cordon Bleu Recipe

 

Back in my younger years I was at a sales dinner meeting and this was the main dish. At that time I swore I would never eat Chicken Cordon Bleu again; it was terrible. Though the years I have seen a number of recipes and none of them looked like they would taste  like the one at the meeting, so I decided to get brave and prepare it myself. This homemade Chicken Cordon Bleu Recipe was delicious, and is going to be added to my favorite recipe list. This recipe has very little prep time, and requires only a few ingredients. The next time I prepare this Chicken Cordon Bleu Recipe, I think I will top the chicken with some cheese sauce.  Enjoy

Ingredients
  • 4 skinless, boneless chicken breast halves

  • ⅛ teaspoon ground black pepper
  • 6 slices Swiss cheese
  • 4 slices cooked ham
  • ½ cup seasoned bread crumbs
Instructions
  1. Preheat oven to 350 degrees F and coat a 7x11 inch baking dish with nonstick cooking spray.
  2. Pound chicken breasts to ¼ inch thickness.
  3. Sprinkle each piece of chicken with salt and pepper (this will be the inside). Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, salt and pepper, then sprinkle chicken evenly with bread crumbs.
  4. Bake for 30 to 35 minutes or until chicken is no longer pink.
  5. Remove from oven, and place ½ cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted.
  6. Remove toothpicks, and serve immediately.

 It has been a long time since I used store purchased Shake and Bake. When I saw this recipe I had to give it a try. This homemade Shake and Bake recipe is the greatest. Just a delicious combination of spices. I don’t remember for sure what the store bought tasted like-but from what I do remember I would say this is even better. With this recipe you could easily prepare 2 cut up chickens. Just cut the recipe in ½ if you wish to do a smaller amount.

  • 2 chickens (cut into pieces)
  • 4 cups dry bread crumbs
  • ⅓ cup vegetable oil
  • 1 tablespoon salt
  • 1 tablespoon paprika
  • 1 tablespoon celery salt
  • 1 teaspoon ground black pepper
  • ½ teaspoon garlic salt
  • ½ teaspoon minced garlic
  • ¼ teaspoon minced onion
  • 1 pinch dried basil leaves
  • 1 pinch dried parsley
  • 1 pinch dried oregano
Instructions

  2. In a large resealable plastic bag combine the crumbs, oil, salt, paprika, celery salt, pepper, garlic salt, minced garlic, minced onion, basil, parsley and oregano. Seal bag and shake all ingredients together.
  3. Bake at 350 F for 1 hour or until juices run clear.

  • 5-6 pound roasting chicken
  • 1 teaspoon olive oil
  • 2 teaspoons seasoning salt
  • 1 teaspoon garlic powder
  • 2 teaspoons dried thyme
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon black pepper
  • ½ cup butter melted
Instructions
  1. Rinse chicken and cavity with cold water and pat dry with a paper towel.
  2. Rub the olive oil on the outside of the chicken.
  3. Sprinkle with seasoning salt inside and out.
  4. Place in a shallow roasting pan with ½ inch of water in the bottom of the pan.
  5. Sprinkle with the rest of the spices and herbs evenly on the outside of the chicken.
