My son has cooked this dish a number of times when he has been home for the Holidays and has the recipe posted on his Blog (blogchef.net). It is really good so I decided to put it on the supper menu for last night’s supper. This is a simple recipe that requires very little prep, and cooking time. The end result is a delicious ham steak dinner.

If you don’t want to deal with a whole ham this would also be a great recipe for the Holidays.

Ingredients
  • 1 bone-in ham steak (1 ¼ pounds)
  • ground black pepper
  • 2 slices bacon
  • 2 tablespoons finely chopped onion
  • 1 teaspoon all-purpose flour
  • 1 ½ cups chicken broth
  • 1 tablespoon maple syrup
  • 3 tablespoons unsalted butter (cut into 3 pieces and chilled)
  • 2 teaspoon instant espresso powder
Instructions
  1. Cook bacon in a large skillet over medium high heat until crisp; reserve bacon for another use or just eat it.
  2. Cook the ham steaks in the bacon grease until nicely browned on both sides; place ham on a dish and cover with aluminum foil to keep warm.
  3. Add the onion to the skillet and cook until onion starts to brown. Whisk in the flour and continue cooking for about 15 seconds, and then mix in the chicken broth and maple syrup, stirring to remove any drippings from the bottom of the pan. Bring heat to simmer and cook until mixture is reduced to about ¾ of a cup and starts to thicken. Remove from heat and stir in the butter and espresso powder; salt and pepper to taste.
  4. Cut steak into 4 pieces and serve with gravy spooned over the top.

Slow-Cooker Turkey Breast with Gravy

I had a turkey in the freezer I wanted to use up so I decided to give this Slow-Cooker Turkey Breast with Gravy recipe a try. This recipe has a little bit of work to it but once the prep is done it is pretty much a set it and forget it for most of the afternoon. The breast comes out juicy and tender and the gravy is delicious over mashed potatoes.
I listed the rosemary as optional, because that spice is very dominant in the recipe.

Slow-Cooker Turkey Breast with Gravy

Ingredients
  • 6- to 7-pound bone-in turkey breast
  • 1 tablespoon butter
  • 1 onion (chopped)
  • 1 carrot (peeled and chopped)
  • 1 celery rib (chopped)
  • 6 garlic cloves (crushed and minced)
  • 7 tablespoons all-purpose flour
  • 2 cups low-sodium chicken broth
  • ½ cup dry white wine
  • 1 teaspoon minced dried thyme
  • 1 sprig rosemary (optional)
  • 2 bay leaves
  • Salt and pepper
Instructions
  1. Remove skin from turkey breast and cut into 4 equal size pieces. In a large skillet over medium high heat cook the skin until nicely browned on both sides; place the skin on the bottom of the slow cooker.
  2. In the same skillet using the butter cook the onion, carrot, garlic, and celery until lightly browned. Whisk in the flour stirring constantly until flour starts to brown, gradually stir in the chicken broth, and wine; continue cooking until mixture starts to boil and then pour the sauce into the slow cooker. Add the thyme, rosemary, and bay leaves into the slow cooker.
  3. Pat turkey breast dry and season generously with salt and pepper. Place turkey in slow cooker meat side up, cover, and cook 5 – 6 hours on low to an internal temperature of 160F. Remove turkey from the slow cooker onto a platter, tent with aluminum foil and let rest for 15 to 20 minutes.
  4. While turkey is resting pour the juices though a fine mesh strainer into a bowl. Salt and pepper the gravy to taste and serve gravy over turkey slices.

Every holiday season I look forward to eggnog turning up in the grocery stores. If you like eggnog, here’s a delicious holiday breakfast treat. This is a basic pancake recipe incorporating the eggnog in place of the eggs and milk.

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 ½ cups eggnog
  • 2 tablespoons butter-melted
  • ½ teaspoon vanilla
Instructions
  1. In a large bowl combine the sugar, flour, baking powder, baking soda, and salt. Mix until well blended.
  2. Stir in the buttermilk, vanilla and butter; batter will be a little lumpy. (Depending on the consistency of the eggnog you are using you might want to thin the batter a little bit. I like it thick enough so it barley pours. If you need to thin it a little bit use regular milk.)
  3. Use a lightly greased griddle at 350 degrees. I use cooking spray-it works very well for this.
  4. Pour batter onto the griddle or pan so the pancakes are about the size you want them. Cook until the top is covered with tiny bubbles. Flip the pancake and cook until golden brown.

  • 1 egg (lightly beaten)
  • 7 tablespoons all-purpose flour (divided)
  • Oil for pan frying

Instructions
  1. In a large bowl beat or whisk the egg. Add the mashed potatoes, parmesan cheese, and 3 tablespoons all-purpose flour; mix until thoroughly combined.
  2. Place the remaining flour in a shallow dish. Divide the potato mixture into six equal portions and form 6 patties. Roll the patties in the flour to coat.
  3. In a large skillet over medium high heat, using cooking oil, cook patties until lightly browned on both sides.
  4. Salt and pepper to taste; serve hot.

Squash is supposed to be really good for you – and I guess it is, until you add all the good stuff to it like brown sugar and butter; but it’s so good!!

  • 1 butternut squash (2 to 2½ pounds)
  • ¼ cup brown sugar (packed)
  • 3 tablespoons unsalted butter (melted)
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon cider vinegar (optional)
Instructions
  1. Preheat oven to 425F.
  2. Peel and remove seeds from squash and cut into 1 inch pieces.
  3. Place the squash pieces in a large bowl. Add the sugar, salt, pepper, and brown sugar. Pour in the melted butter and toss to coat.
  4. Line a rimmed baking sheet with aluminum foil, lightly spray with cooking spray, and arrange the squash pieces in a single layer on the foil.
  5. Bake for 45 minutes. Mixing the pieces about every 15 minutes until squash is glazed and tender. (While mixing them try to flip as many as you can so they brown on both sides)
  6. If using the vinegar, drizzle the vinegar over the pieces, and serve hot. Enjoy

This is a great combination of fall flavors with the tart cranberries offsetting the sweetness of the apples. Outside of the crust this is a very simple recipe to put together.
I cheated on this one and used a store bought pie crust. If you looking for a good pie recipe for the upcoming Thanksgiving Day holiday give this one a try; it’s really good.

  • 4 cups apples (peeled and sliced)
  • 2 cups fresh cranberries
  • ¾ cup brown sugar
  • ½ cup sugar
  • ⅓ cup all-purpose flour
  • 1 teaspoon cinnamon
  • ½ cup chopped walnuts or almonds
  • Pie crust for a 2 crust pie (favorite recipe or store bought)
Instructions
  1. Preheat oven to 425F.
  2. In a large bowl staring with the apple slices mix all the ingredients together using a wood spoon until well combined.

  5. Place one crust into the bottom of a 9 inch pie plate, tilt the bowl over the crust and spoon the apple mixture into the crust, and cover with the other crust, cutting several slits in the crust to vent it.

  8. (if edges on the pie start to get to dark cover edges with aluminum foil)
  9. Tip: I cover the edges with aluminum foil right from the start and then remove the foil toward the end of the baking cycle.

Mexican Macaroni Salad Recipe

With Labor Day approaching I thought this would be a good time to post another side dish recipe. This is a simple recipe to prepare and will feed a good size crowd. The recipe is mildly seasoned so if you want to heat it up a little bit, it should work out well; Jalapenos would be a good addition to this recipe.

Ingredients
  • 1 pound elbow macaroni
  • 2 ears corn
  • 1 can black beans (drained and rinsed)
  • ½ cup black olives (chopped)
  • 6 Roma tomatoes (seeded and diced)
  • 3 green onions sliced
  • 1 cup shredded cheddar cheese
  • ½ red onion (finely chopped)
  • 1 cup jarred salsa
  • 1 cup sour cream
  • ¼ cup mayonnaise
  • ½ teaspoon cumin
  • Salt and pepper to taste
Instructions
  1. Cook macaroni according to package directions; drain, rinse, and set aside to cool.
  2. While macaroni is cooking grill corn over medium high heat until done and slightly charred. Cool and cut kernels off the cob.
  3. In a large bowl mix together the elbow macaroni, corn, black beans, tomatoes, and green onions.
  4. in a medium size bowl mix together the mayo, sour cream, cumin, and salsa until thoroughly combined. Mix the sauce into the macaroni mixture, fold in the cheese; salt and pepper to taste.
  5. Serve cold

Adding smoked flavor to your grilled food can be a nice added touch. This Gas Grill Smoked Pork Chops Recipe adds a nice lightly smoked flavor to the pork chops complimented by a delicious homemade barbeque sauce. The pork chops for this recipe are thick cut to allow enough time for the pork to absorb the smoked flavor before they are finished cooking.

Fire up the grill, place a packed of soaked wood chips between the grate and the burner, and you are ready to create your own smoke flavoring using your gas grill.

This is a simple recipe, and fairly quick. Create the BBQ sauce while your pork chops are smoking – just be sure to use thick cut chops to allow enough smoking time before the chops are done.

  • Ingredients for sauce
  • ½ cup ketchup
  • ¼ cup molasses
  • 2 tablespoons grated onion
  • 2 tablespoon Worcestershire sauce
  • 2 tablespoon Dijon mustard
  • 2 tablespoons cider vinegar
  • 1 tablespoon light brown sugar (packed)
  • Ingredients for Pork Chops
  • 2 cups wood chips (soaked in water for at least 30 minutes)
  • 4 bone in pork chops (cut 1 ½ inch this) original recipe calls for rib chops – they were not available so I used sirloin chops.
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • Vegetable oil
  • Heavy Duty Aluminum foil to crate packet for wood chips.
Instructions
  1. Using a piece of heavy duty aluminum foil place the wood chips in the center and form the foil into a closed packet around them. Using a knife cut slits in the top of the packet to release the smoke. Place the packet between the primary burner and cooking grate. Preheat and prepare the grill on high heat until foil packet starts to generate smoke. Reduce primary burner to medium high heat and shut all other burners off.
  2. Brush chops lightly with cooking oil and season each one with ½ teaspoon salt, and pepper. Place chops on cool side of grill, close cover, and smoke chops for about 20 minutes, or to an internal temperature of 120F.
  3. While chops are cooking mix all sauce ingredients together in a medium size sauce pan. Bring mixture to a boil, reduce heat medium, and continue cooking, stirring occasionally, until mixture starts to thicken. Remove ½ cup of the sauce, and set it aside for a serving sauce.
  4. Brush chops with sauce, and turn the burners under the chops to medium high heat. Continue brushing and turning chops until sauce is used up and chops are slightly charred. Cook to and internal temperature of 145F. Remove chops to a serving platter, tent with aluminum foil, and let rest 10 minutes before serving.
  5. Serve with reserved sauce.

With the 4th of July coming up at the end of the week I thought it would be a great time to post this Best Ever Grilled Turkey Burgers Recipe. This is a simple recipe that requires very few ingredients, almost no prep time, and cooks quickly, with the end result being delicious, juicy, burgers.

I served these burgers on a grill toasted bun with slices of tomato and Valeria onions. You can use your choice of condiments.

  • 2 pounds ground turkey

Steak Dry Rub Recipe

Steaks on the grill are always a nice treat so when I ran across this spice rub recipe I decided to give it a try. I used this spice rub on ribeye steaks and they were delicious. This is a fairly large recipe so you will have spice mixture left over to use on future cook-outs.
Wow you guests this 4th of July with this spice rub recipe on your favorite cut of steak.
I also used this recipe in a fish coating on our last fish fry by mixing 2 tablespoons of the spice mixture in all-purpose flour as part of the coating mix; it turned out really good.
