Here Are Some Best Easy Recipes

Roasted Cauliflower Tacos

To begin, roast the vegetables. Julia roasts the cauliflower florets and cabbage on a single baking sheet together. I changed the recipe and baked the cauliflower and cabbage separately on different baking pans, adding the cabbage to the oven halfway through the cauliflower cooking time. It’s OK either way! Toss the vegetables with spices, olive oil, and salt before putting them in the oven, whether using one baking pan or two.

Preheat the oven to 400 degrees Fahrenheit. On a big sheet pan, spread out the cauliflower and cabbage. Drizzle the olive oil over the top and season with cumin, coriander, and salt. Mix everything with your hands and spread it out into an even layer. Roast for 45 minutes, stirring every 15 minutes until the veggies are softened and browned in places. (I used two sheet pans to roast my cabbage and cauliflower.) The cauliflower took 25 minutes to cook, and the cabbage took 10 minutes.

Vegan Tacos

This recipe uses a Jamaican Jerk-spiced jackfruit as the vegan taco meat. If you haven’t had jackfruit before, it’s one of my favorite plant-based meat substitutes. It has a stringy, meaty texture that resembles shredded meat, such as a pulled pig or chicken tinga. We couldn’t stop talking about how beefy this filling looked as we made it!

Nisha seasons canned jackfruit with a homemade jerk flavor blend because it’s boring. The jerk spices, including cinnamon, black pepper, cumin, and cayenne pepper, are likely already in your cabinet. This blend is made up of standard components that are aromatic, sweet, and spicy. The taco filling is delicious, tangy, and juicy when combined with lime juice, tamari, and tomato paste. We couldn’t get enough of it!

Avocado Sweet Potato Tacos

Preheat the oven to 400 degrees Fahrenheit and prepare a large baking sheet with parchment paper.
Spread the sweet potatoes on the baking sheet after tossing them with olive oil, chili powder, salt, and pepper. Roast for 20 minutes, or until golden brown on the outside. To make the avocado yogurt sauce, follow these steps: Combine the yogurt, avocado, garlic, lime juice, and a couple of liberal pinches of salt and pepper in a small food processor. Pulse until the mixture is completely smooth. Season with salt and pepper to taste. Refrigerate until ready to use.

Vegan Quesadilla Recipe

Finely dice the fillings. The materials for the filling are cut into tiny bits in the photo above. Take a look at those sweet potatoes! It’s for a purpose why I cut them to that size. For starters, it allows them to fit the quesadilla in the first place. The pieces will fall out if they are too large! Because the pieces are minor, you can get a little bit of everything in each bite. Yum! They don’t fit as well as you think they will. It’ll be tempting to pile on the fillings as you make your vegan tortilla. However, each tortilla has a smaller capacity than you might think.

If you try to cram too much into the quesadilla, a lot of the filling will fall out when you fold it in half, or you won’t be able to fold it. A tasty (and filling!) vegan quesadilla may be made with a few tablespoons of each ingredient. Make them your own! This vegan quesadilla recipe is quite adaptable, so have fun with it. Use mashed, baked sweet potato flesh or a smear of refried beans instead of vegan cheese if you don’t have any on hand.

Best Buddha Bowl

Change up the vegetables. Try roasted butternut squash or ordinary potatoes in place of the sweet potato, or experiment with a different roasted vegetable. Roasted Brussels sprouts, broccoli, cauliflower, asparagus, and beets are excellent options. You might also experiment with different ways to prepare them, instead of leaving the kale uncooked, steam or roast the carrots or boil the sweet potatoes. Grilled vegetables would also taste delicious here in the summer!

Substitute another protein. Try edamame, lentils, black beans (or any bean), or cubes of crispy tofu or tempeh on top of your grain bowls. You could even use roasted chickpeas for added crunch! Switch it up with the grain. Quinoa, farro, or couscous can be used instead of rice. Skip the grain and replace it with cauliflower or broccoli rice for more veggie punch.

Vegan Burrito Bowl

When you purchase a burrito bowl from Chipotle, you must answer one crucial question: what protein do you want? Instead of meat, I use grilled portobello mushrooms to fill this plant-based bowl. They’re smoky, delicious, and simple to grill! If you don’t have a grill, cook them in a cast-iron grill pan on the stove or in the oven under the broiler.

While the mushrooms are cooking, char the fajita vegetables in this cast iron skillet on the grill. Make sure the pan is scorching hot so the peppers can genuinely sear. Cook them in a cast-iron skillet if you don’t have a grill. When the charred peppers are removed from the flame, season them with salt and pepper or 1/2 teaspoon chili powder or taco seasoning!

Roasted Veggie Bowl

On Love and Lemons, Day 1 of a meal planning week is this grain bowl recipe! Why? First and foremost, it’s because The Love & Lemons Meal Record and Market List, our meal planning diary, is available today! If you missed my post from last week, you could read it here. If you haven’t already done so, go here to place your order!

I frequently recommend preparing components in large batches on Sundays when writing about meal prep or making quick, easy dinners during the week. This is a good strategy. However, this week, I’m going to try something new. Starting with one dish – this delicious, quick Roasted Veggie Grain Bowl – I’m going to use the same ingredients to make a new dinner every night for the next five evenings, such that each new meal builds on the last. Here’s where you’ll find the week’s recap!

Minestrone Soup

Because the pasta absorbs the liquid while it sits in the remaining soup, this recipe is best served shortly after it’s made. If you wish to make it ahead of time, cook the pasta separately and toss it into the soup just before serving. You can also omit the noodles and add an extra cup of beans to the soup instead. The soup will keep in the fridge for up to four days if prepared.

Top each bowl with a sprinkle of parsley, red pepper flakes, and freshly grated Parmesan cheese when ready to eat. You can omit the cheese if you’re vegan and instead top your bowl with a scoop of vegan pesto. (Note to non-vegans: standard pesto is also a delicious topping for minestrone!) Serve the soup with crusty bread and call it a day, or add a side salad to complete the meal. This minestrone would go well with this arugula salad, this beet salad, and this pear salad. Enjoy!

Best Lentil Soup

This recipe for curry lentil soup hits all of those boxes and more. It’s created with pantry staples like dried lentils, canned tomatoes, onions, garlic, and spices, making it incredibly simple to prepare without going to the shop. It takes only about 30 minutes to prepare so that you can eat it any night of the week, and it stores beautifully. But, most importantly, it’s delectable. It’s thick and cozy because of coconut milk, fresh ginger, and curry powder, but it’s still light and refreshing, thanks to a generous squeeze of lime juice. I hope you like this soup as much as we do!

This curry lentil soup dish is easier to make than you think, especially considering its flavor. Begin by sautéing the onions over medium heat, then add the ginger, garlic, curry powder, and red pepper flakes and cook for another few minutes. Then add the tomatoes, lentils, water, coconut milk, sea salt, and freshly ground black pepper and whisk to combine. Simmer for about 25 minutes, or until the lentils are soft, then garnish with chopped cilantro and a squeeze of lime.

Tortellini Soup

In a big pot over medium heat, heat the oil. Cook, occasionally stirring, until the onion, carrots, fennel, salt, and a few grinds of black pepper soften about 8 minutes. Combine the balsamic vinegar, garlic, tomatoes, broth, thyme, and red pepper flakes in a large mixing bowl. Cook for 30 minutes, or until the vegetables are cooked covered. Meanwhile, prepare the tortellini until al dente according to package guidelines in a pot of salted boiling water. Simmer for 2 minutes more after adding the tortellini and kale to the broth. Season with an additional 14 to 12 teaspoon salt and a few liberal pinches of pepper to taste. Serve in dishes with scoops of kale pesto and fresh parsley on top.
