Grilled Dry Rub Chicken Recipe

Two wonderful spring days here in Upper Michigan so on the third day I decided to fire up the grill. I should have watched the weather closer because it turned out to be a nasty surprise with temps dropping 20-25 degrees in hours and as I look out the window today it is rain mixed with snow. Oh well, I’ve grilled in a lot worse conditions than this; I guess I’m just getting anxious for summer.

The weather may have been disappointing, but this Grilled Dry Rub Chicken Recipe was not. This one will go on my favorite list, it is absolutely delicious. If there are any drawbacks to this recipe, it is that, you have to allow enough time for the chicken to absorb the blend of seasoning. I rubbed the chicken the morning I planned on grilling it, fired up the grill at supper time and it was about perfect-I would think you could even do this the night before if you wanted to.

This Grilled Dry Rub Chicken Recipe makes enough to do 2 chickens, about 3-4 pounds each. The next time you fire up the grill give this one a try, it’s really good. Enjoy

Tip: if you have the ability to add some smoke to your grill; I think this would be a great addition to the recipe.

Ingredients
  • 1-2 whole chickens (2-3 pounds each)
  • 2 tablespoons paprika
  • 1½ tablespoons kosher salt
  • 2 teaspoons coarse fresh ground black pepper
  • 1 tablespoon dried basil
  • 1 tablespoon garlic powder
  • 1½ teaspoons onion powder
  • 1½ teaspoons dried oregano
  • 1 teaspoon white pepper
  • ½ teaspoon cayenne pepper-or to taste

Instructions
  1. In a small bowl mix all the seasoning ingredients together until well blended.
  2. How you cut the chicken up is pretty much your choice. I chose to cut the backbone out with a pair of kitchen shears and flatten the chicken bone side down. This also allows me to separate the leg quarters easily; because they usually get done first.
  3. Toughly rub the chicken with the seasoning mix on the skin and bone side-partially separate the skin, without completely detaching the skin, rubbing some of the seasoning mix on the meat under the skin.
  4. Cover and refrigerate for 8 hours or overnight.

  6. Preheat the grill to medium high heat and lightly oil the grill plates

Baked Steak Burritos Recipe

It had been awhile since we have had Mexican food so I decided to put this Baked Steak Burritos Recipe on the menu. This is a simple recipe to but together and doesn’t require a lot of ingredients. The original recipe called for 12- 6 inch soft Tacos or fajitas, but I had some 8 inch on hand, so I decided to use them. This is a basic recipe that does have a little heat; but if you want to turn up the heat a little more just change the mild enchilada sauce to hot, or add some cayenne pepper to taste. When you are spreading the re-fried beans kind of eye them up a little bit so you don’t run out before the burritos are completed.

This recipe has a good blend of flavors and there is room to add some additional ingredients if you wish to do so. I prepared the recipe as written and it was really good.

Ingredients
  • 1½ pound sirloin tip steak. (Thin sliced into strips)
  • 1 package taco seasoning mix
  • 1 can re-fried beans (16 ounce)
  • 6 soft taco or fajitas (8 inch)
  • ½ cup butter or margarine
  • 2 cups shredded cheddar cheese
  • 3 medium green onions (sliced)
  • 1 can mild enchilada sauce (10 ounce)
  • 1 cup Mexican cheese blend

Instructions
  1. Pre-Heat oven to 400F.
  2. Slice the sirloin steak into bite size thin strips. Melt the butter in a large skillet and cook the steak to your desired doneness. Just be for the steak is done stir in the taco seasoning mix. Drain if needed.

  4. Using a microwavable dish or sauce pan- using the microwave or stove top heat the refried beans until warmed. (I also slightly warmed the soft tacos in the microwave to make them easier to work with.)
  5. To make the burritos, using a spoon, spread the refried beans to about 1/ 4 inch from the edge of the wraps. Top with the beef strips, green onion and cheddar cheese. Roll up and fold in the sides.

  7. Place the burritos in a 13×9 baking dish, top with the enchilada sauce and sprinkle on the Mexican blend cheese; bake for about 10 minutes, or until burritos are heated through, and cheese is melted.

Shrimp and Wild Rice Casserole Recipe

In the past the only chance I have had to work with wild rice was in combination; such as in the Uncle Bens seasoning packets. When I ran into some of the pure wild rice on sale I decided to give it a try. The texture of the wild rice is quite different then the long grain rice and I thought that it was pretty good. If you use the pure version of wild rice be sure to allow enough cooking time because it does take a lot longer to cook.

There are a number of wild rice recipes I wanted to try-so the first one I picked was this Shrimp and Wild Rice Casserole adapted from Food Network.

There is not a lot of prep time in this recipe, but because of the wild rice, there is a lot of cooking time. I followed the recipe as written and the shrimp were cooked perfectly, and the combination of flavors was delicious. Ingredients
  • 1 (8-ounce) package wild rice (8-ounce about 2 cups)
  • 4 cloves of garlic (minced)

  • 1 can condensed cream of mushroom soup (10¾ ounces)
  • 2 cups shredded sharp Cheddar cheese

Instructions
  1. Cook the wild rice according to package directions. Drain
  2. While the rice is cooking chop up the vegetables and garlic. In a large skilled using the butter cook the vegetables until tender. Cover and keep warm.

  5. In a medium sauce pan using 2 cups of water, and ½ teaspoon of salt; bring the water to a boil and cook the shrimp for 1 minute. Drain (Shrimp should be light pink)

  7. In the fry pan with the cooked vegetables add the cream of mushroom soup, 1 1/ 2 cups cheese, rice and shrimp. Salt and pepper to taste.
  8. Spoon the mixture into a 1½ quart casserole dish, top with the remaining cheese, and bake in the oven for 30 minutes or until hot and bubbly.

Whole Wheat Banana Strawberry Muffins

This recipe is rich in fiber and a lot of delicious flavors come together to create these Whole Wheat Banana Strawberry Muffins. I thought with strawberry season starting shortly in many parts of the country it was a good time for this recipe. I don’t use whole wheat a lot, but with this recipe it blended in very well with the rest of the ingredients.

I had thought about making cupcakes for this next post but decided on this healthier muffins recipe instead, and I was glad I did, my wife loved them. Cook them in the morning, and serve them warm with butter melting on the top. Delicious

  • 1/ 2 cup brown sugar (packed)

  • 1 tablespoon cinnamon
  • 1 cup sliced strawberries
  • 1 cup chopped walnuts (optional)

Instructions

  3. Mix all dry ingredients together in a medium size bowl.
  4. In a large bow whisk together the egg, vanilla, applesauce, and mashed bananas. Slowly mix in the dry ingredients, and mix until thoroughly moistened. Then fold in the strawberries and walnuts.

Sometimes I like to take a break and pick a pizza up from the store or local restaurant. This time I decided to just pick up the ingredients and put a homemade pizza together. I have to admit I did cheat a little bit by purchasing a ready-made crust. The toppings for this pizza are pretty basic so you can add whatever you like to the topping ingredients. I followed the recipe as written and we really enjoyed this Sausage Pan Pizza dish.

Ingredients
  • ½ pound bulk Italian sausage
  • 1½ cups sliced fresh mushrooms
  • 2 medium Roma tomatoes (diced)
  • ½ cup pizza sauce
  • 1- can refrigerated pizza crust (or your favorite crust recipe)
  • 2 cups shredded mozzarella cheese (divided)

Instructions
  1. Preheat oven to 400F.
  2. In a medium size skillet brown the Italian sausage with the mushrooms until sausage is no longer pink inside. Then mix in the pizza sauce and add the diced tomatoes. Cover to keep warm.
  3. Shape the pizza dough into a 12 inch cast iron, or oven proof skillet, working it half way up the sides. Bake for 5 minutes.
  4. Remove the pizza crust from the oven and fill the crust by spreading 1¾ cups shredded mozzarella cheese over the bottom. Then spoon in the sausage mixture, and top with the remaining cheese.
  5. Bake for 15 minutes or until crust is golden brown.
  6. Let stand 10 minutes before serving.

I was short on time and needed a chicken recipe that was fast and good. When I ran across this Chicken Scallopini Recipe I thought it was worth giving it a try. Outside of the time it takes to bake the chicken breasts this is a recipe that is quick to put together. If you like lemon pepper chicken you are sure to like this recipe, with the dominating flavor being the lemon. This is a basic recipe with room to spice it up a little more if you choose to. I prepared the recipe as written and we really enjoyed it.

Ingredients
  • 4 boneless skinless chicken breast halves
  • ¼ cup all-purpose flour
  • ¼ teaspoon black pepper

Instructions
  1. Preheat oven to 350F.
  2. in a shallow pan or pie dish mix together the flour, garlic salt, pepper and paprika.
  3. Roll the chicken in the flour mixture; then in a large skilled using the butter brown the chicken on both sides.
  4. Place the chicken into a shallow backing dish lightly sprayed with cooking oil. Cook until juices run clear or to an internal temperature of 160F. (This should take 20-30 minutes depending on size) Remove chicken and keep warm.
  5. In the same skillet over low heat stir in the water, lemon juice, and chicken bouillon, stirring to loosen the particles on the bottom of the pan. Add the four lemon slices and cook for about an additional 1-2 minutes.

It’s so easy to grab a can of chili at the store for a quick Coney dog dinner, but the fact is it doesn’t take a lot more to put your own together. This Hot Dogs Con Carne recipe is a very simple recipe. You can have grilled, or broiled Coney dogs, with toasted buns on the table in less than an hour. I followed the recipe as written and even though it is a simple recipe it’s very good without addition any additional ingredients. The original recipe calls for broiling the hot dogs and buns, but I think grilling them would be even better.

Ingredients
  • 1 tablespoon cooking oil
  • 1⅓ cup onion (chopped)
  • ½ pound ground chuck
  • 1 can tomato sauce

Instructions
  1. In a large skillet using the oil brown the onions until tender.
  2. Add the ground beef to the skillet and brown until meat is no longer pink inside. Drain if needed. Stir in the tomato sauce, salt, chili powder, cumin, and sugar. Simmer stirring frequently until most of the liquid is absorbed. (About 20 minutes)
  3. Broil the hotdogs about 4 inches from the heat turning once until nicely browned. (Or grill)
  4. Butter the cut side of the hotdog buns and broil until toasted. (Or cut side down on the grill). This is fast, so watch them close.
  5. To serve, place a hotdog inside each bun, top with the chili mixture and garnish with cheddar cheese.

Winter is really hanging on here in upper Michigan. We still have 2 feet of snow on the ground and its past the middle of April with a forecast of rain mixed with snow for today! However us “Yooper’s” are unstoppable; time to fire up the grill again.

If you like the flavor of garlic, this Grilled Steakhouse Burger is one of the best burgers you will ever prepare on the grill. The garlic aioli that is added as one of the condiments and is a delicious combination enhancing the flavor of the burger and onion rings, with bacon giving the burger that special touch, like bacon always does.

This is a simple recipe but give yourself a little bit of time-because it does take some time to put it all together. The next time you fire up the grill give this Grilled Steakhouse Burger recipe a try; it’s delicious. Enjoy

Ingredients
  • 1 pound ground sirloin
  • Montreal Steak Seasoning
  • 8 slices apple wood smoked bacon (cooked until crispy)
  • 8 frozen onion rings
  • 4 slices of Swiss cheese
  • 4 hamburger buns
  • 1- 8 ounce package of fresh mushrooms (sliced)
  • 1 tablespoon Worcestershire sauce
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons butter
  • salt and pepper to taste
  • Garlic Aioli-
  • ½ cup mayonnaise
  • 1 tablespoon fresh garlic (finely chopped)
  • 1 tablespoons freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • salt and pepper (to taste)

Instructions
  1. Cook the bacon on the stove top, or in the oven until crispy. Drain on paper towels.
  2. While the bacon is cooking prepare the Garlic Aioli by mixing all the Aioli ingredients together in a small bowl. Cover and set aside in the refrigerator.
  3. In a small skillet melt the butter in the olive oil, and add the sliced mushrooms. Cook on medium heat for about 4 minutes, and then add the Worcestershire sauce, then season with salt and pepper. Sautee on low heat for about 20 minutes; until mushrooms are well flavored, and tender.
  4. While mushrooms are sauteing heat the deep fryer to 375F. Deep fry the onion rings until golden brown. Set aside.
  5. Lightly grease the grill grates and preheat the grill to medium high heat. Divide the ground sirloin into 4 equal portions to form patties. Season the patties on both sides with Montreal steak seasoning. Grill turning once to your desired doneness. (while hamburgers are grilling toast the buns on the grill cut side down) when the burgers are almost done top each one with a slice of Swiss cheese, close the grill and continue cooking until cheese has melted.
  6. Putting the burgers together.
  7. Place each hamburger patty onto the top of the bottom half of each bun. Top with bacon, mushrooms, and about a tablespoon of Garlic Aioli, then the onion rings. Place the top half of the bun onto the burger.

Zest Up Your Life with a Zesty Italian Recipe

At the age of 61 it doesn’t take a lot to zest up my life, but I love trying new recipes and ingredients to go along with them. I was real excited when I was chosen for this opportunity with Glam Media to Zest up my life with Zesty Italian. I look at this as being is a great opportunity to experiment with new recipes moving toward a healthier lifestyle incorporating more salads into my daily meals. When I started to look around the internet I was real surprised at the number of recipes that called for Zesty Italian as one of the ingredients in their recipe. I am also called on frequently to prepare a dish for the local church, which I am glad to do, but I like to change things up a little bit so I am not serving the same dish every time.

 

 This is the start of a series of two posts, in this post there will be a recipe for a healthier type of life style salad; because healthy food leads to a zestier life style. On April 23rd, in the second post, I will prepare a Zesty Italian Recipe that can be used for a pot luck or church social. I hope you enjoy!

Ingredients
  • 1 cucumber (sliced or cubed)
  • 1 pint cherry tomatoes (cut in half)
  • 1 medium onion (sliced thinly)
  • ½ sweet green bell pepper (diced or cubed)
  • ½ sweet red bell pepper (diced or cubed)
  • ½ sweet yellow pepper (diced or cubed)
  • ½ cup Low Fat Zesty Italian salad dressing
  • ½ teaspoon seasoned salt

  • 1 cup Caesar croutons

Instructions
  1. Prepare vegetables as called for in ingredients list.
  2. In a large bowl mix together the Zesty Italian dressing, cheddar cheese and chopped vegetables.
  3. Salt and pepper to taste with seasoned salt and pepper.
  4. Chill and serve topped with the Caesar croutons.
  5. Tip: Use fresh grated Parmesan cheese in place of the cheddar; it’s a great addition to this recipe.

I have prepared Chicken Tetrazzini a number of times but when I ran into this Creamy and Cheese Chicken Tetrazzini Recipe it looked really good, so I thought I would put it on the menu for dinner. This recipe is a little time consuming but well worth the time and effort. The combination of the 3 cheeses is almost a perfect blend. Preparing the cheese sauce reminds me somewhat of preparing macaroni and cheese, which gives this Chicken Tetrazzini Recipe its creamy, cheesy flavor. This one will go on my favorite recipe list.

Ingredients
  • ½ pound spaghetti
  • 1 pound boneless skinless chicken breasts (cut into bite-size pieces)
  • 1 sweet red pepper (chopped)
  • 1- 8 package fresh mushrooms (sliced)
  • 4 ounces cream cheese (cubed)
  • ¼ cup flour
  • 1 can chicken broth (14.5 ounces)
  • 3 Tablespoons Grated Parmesan Cheese (divided)
  • ½ cup Shredded Mozzarella Cheese
  • Oil for browning
  • Salt and pepper to taste

Instructions
  1. Preheat oven to 350F.
  2. In a large kettle cook the pasta according to package directions.
  3. While the pasta is cooking, cube the chicken, and chop the vegetables.
  4. In a lightly oiled large skillet cook the chicken and vegetables until chicken is no longer pink inside. Remove the mixture, cover to keep warm, and set aside.
  5. In the same skillet combine the chicken broth, cream cheese, and flour; brink to a boil whisking constantly. Reduce the heat and simmer while stirring, until mixture thickens.
  6. Drain the pasta and mix in the vegetable cheese sauce and 2 tablespoons of the Parmesan Cheese. Salt and pepper to taste.
  7. Spoon the mixture into a 3 quart casserole dish and bake covered for 25 minutes. Remove from the oven and top with the Shredded Mozzarella Cheese and 1 tablespoon of Grated Parmesan Cheese. Return the casserole to the oven and bake uncovered until cheese is melted.
  8. Serve hot.
